Zucchini Pasta II
This one is WONDERFUL! Not alot of fat and calories and my picky eater of a husband loved it! Only chages I made were to double the recipe and then add 2 cans of diced tomatoes in garlic and basil seasonings (because I love tomatoes). I also put all of it in a casserole dish and topped with motzerella and baked it for 20 min at 350 degrees to better set in the flavors!

French Fry Casserole
This has become my 15 yr old sons favorite with a few minor changes! He LOVES Mexican dishes of all sorts and loves to cook himself! So this was an easy one for him to do on his own! His changes: add 1/4 cup sour creame to meat mixture. also add 1 can of black olives (torn to bits) into the meat mixture with the creame of mushroom soup. Then mix with cheese cover with fries and add another cup of shedded chedder on top at the last 5 min for a lil extra kick!

Ham, Potato and Broccoli Casserole
i changed this a bit.. i added more ham and a half cup mustard and added cheddar to the end of the recipie. it was wonderful family ate it all and wanted more!
