Spicy Vegan Potato Curry

Just made this recipe today to include in my Indian themed dinner (also making saag paneer, coconut curry cabbage, "red" onion chutney and papadum, basmati rice and potato pea samosas) The combination of ingredients make the most wonderful sauce. Next time, I will add mixed veggies instead of just peas. Also, I use frozen instead of canned as they are a better consistency.

Peanut Butter and Pumpkin Dog Treats

Great recipe. Dogs love it and it is so much more healthy than store bought dog treats. I took suggestion from others and added more pumpkin, more peanut butter and 1 cup of oats. I used a cookie scoop on a greased cookie sheet.

Homemade Dog Food

As with most people, I am getting more concerned with the quality of store bought food even if you buy high quality. I make something like this recipe for my dogs every week. I buy chicken legs on sale. Bake them, remove all meat. Make broth from bones and skin. Add finely chopped chicken meat, sweet potatoes and carrots to broth. Cook rice in broth. I give them half store bought food and half chicken and rice for each meal. The dogs love it and it is healthier than 100% store bought food. If I knew I could give them all the nutrients they needed in homemade food, I would totally eliminate store bought food and dog treats.

Delicious Vegan Hot Chocolate

Just made it - YUM!!! We used SO coconut vanilla milk instead of soy and did not add the vanilla extract. Definitely a keeper :)

Traditional Mashed Potatoes

Very good. I used a ricer to mash the potatoes so they came out super light and fluffy. A little garlic powder adds a nice touch also.

Mediterranean Black Olive Bread

Amazing recipe...I feel confident in making delicious gourmet bread given the recipe and tips. I made it with brine olives first and wasn't real pleased then kalmatas which came out much better. I serve it with a sundried tomato and roasted garlic dipping oil. This is a keeper :)

Carrot Cake Cookies

The taste is fantastic. I also added 1 cup of coconut and 1/2 cup of raisins. Really a great recipe to add to my fall must haves. I made it in a wilton pumpkin rice crispy treat mold to make it look like a pumpkin cookie but I had an issue with sticking and frosted it with cream cheese frosting. Tip: really spray the pan well if you do something like this.

Curried Mustard Greens with Kidney Beans

This is a pretty good way to get those healthy dark greens in your diet in a different way. Being vegetarian, we are always looking for good sources of veggies and protiens. I used 1/4 cup heavy cream and 1/2 cup skim milk. in place of the half and half and used olive oil instead of ghee.

Saltine Toffee Cookies

Spinach Quiche with homemade Pie Crust

I used Paula Deen's Pie Crust recipe and dry baked it before putting in the filling so the crust was crispy instead of soggy. I did not use any butter (don't need it); no mushrooms (don't like them); no feta (didn't have it); use half and half or heavy cream instead of milk for a more custardy quiche and the secret to a great custard is to add a small amout of nutmeg :)

Roasted Brussels Sprouts

Roasted brussel sprouts help me stay on my diet. They are a great snack. I tried using the Frozen ones and they worked out great. Sometimes I add garlic powder and smoked paprika.

My favorite indian dish :) I use golden raisins instead of regular. Many times, I use a bag of frozen veggie mix (carrots, green beans, corn, lima bean, peas) to make quicker. Can use evaporated milk to reduce the fat. They type of curry matters.

Vegetarian Korma

Good way to get your veggies. You can use really any combination of veggies. To make this healthier, use plain yogurt or canned evaporated milk instead of heavy cream. The type of curry that you use, really changes the taste of the dish. I do the onions in the food processor so they are really small and use whole canned tomatoes then pulse those in the food processor.
