German Potato Pancakes

These were easy to make and very tasty. I used metal rings to make mine perfectly round, and they looked really nice. I omitted the onion just because I was lazy, and I fried them in olive oil. YUM!

Pumpkin Oatmeal

LOVE this oatmeal! My husband doesn't like oatmeal, but he really loved this. I followed the recipe to the letter, but I used goat milk instead of soy milk. I also added a touch more honey, I think only because most soy milk is sweetened, so I didn't have the added sweetness from the soy milk. So delicious and healthy, it tastes indulgent but it's not!

Mini Poppy Seed Loaves

I am only giving this four stars for two reasons: 1) it was a tad dense and 2) I didn't follow the recipe to a 'T'. I used half olive oil for half of the melted butter. I didn't have lemon, so omitted the zest. I also didn't have almond extract, so omitted that too. I cut down the sugar by 1/4 cup. I also baked in a 9" loaf tin, for about 1 hour at 350 F. Finally, as per other reviews, I doubled the poppy seeds and was so glad I did - 1 tbsp certainly is not enough! It was a nice end result but not the best I've had. Thanks!

A fantastic recipe. I made it to a T, except for using only 3 tablespoons sugar, less salt, and using red wine vinegar because I didn't have apple cider vinegar. Wonderful!

Watermelon Sangria

What an amazing cocktail!!! I served this at a party and everyone loved it. I should say, however, that made as written it would be ridiculously sweet. My watermelons were average in sweetness, but I still omitted the simple syrup. The result was perfect. I used Cointreau instead of triple sec, but both are sweet, so the simple syrup is not needed. If I had added the syrup, the drink would have been disgustingly sweet. So, make as is - but forget the syrup!!!

Hummus Casserole

This is so healthy, fresh and delicious! I have made this numerous times now and my husband loves it. I have made it both with ground beef and ground lamb - both are great. I triple the allspice every time. Depending on what I have, I make it into a sort of salad - just put a torn pita on each plate, top with hummus, then the meat, then either shredded romaine or halved cherry tomatoes (or both), then sliced red onion, then parsley. Salt, pepper, paprika, lemon juice. SO good! The pine nuts are tasty as well, but I feel like you can easily skip them if you don't have them to hand. Enjoy!

Greek Meze Dinner Party

Serve this meze spread with lots of good crusty bread, and hand-cut french fries shallow-fried in olive oil. To get ahead, make the spanakopita, tzatziki and baklava the day before. Enjoy your meze party with ouzo on ice, or a nice Greek wine! Rose would be my choice. Kali orexi!

Chocolate Rocky Road Cookies

These cookies are nice, but we probably won't be running to make them again. Like another reviewer, we sort of felt something was missing. They look pretty with the browned marshmallow tops, but in the end they're not out of this world special. The only thing I did differently was cut the sugar by HALF, like another reviewer. They were still extremely sweet, so I really recommend cutting the sugar down by at least half.

These are really nice muffins! One important word of advice, though: cut down the sugar!!! I halved the sugar and they were still super sweet. Next time I will add even less. The granola adds sweetness, the banana adds sweetness and the coconut adds sweetness... so, really, you don't need 2 cups of sugar! Otherwise, I followed to a T, except for using 3/4 cup olive oil in place of the 1 cup butter. I sprinkled granola over the tops of the muffins before baking, which made them look really appetizing and pretty. Will make again, with less sugar. Thank you!

Grilled Spicy Lamb Burgers

Mystery Chocolate Cake

This cake is absolutely stunning. I will make this anytime I need a choc cake or cupcakes. So unbelievably moist! Absolutely no hint of beet. I took other reviewers' advice and pureed the beets. I actually pureed the beets in the blender along with the eggs and oil - the result was intensely pink, smooth and creamy. I then poured that out into a bowl and followed the recipe as stated from there. I pretty much followed the recipe to the letter, except I used olive oil instead of reg veg oil, and the result was fabulous. I made cupcakes and baked at the stated temp for about 18 minutes. Thanks! A gorgeous recipe! **Update** I made these a second time for my husband's birthday BBQ, and two different people told me they were the best chocolate cupcakes they had ever had!

Creamy Chocolate Frosting

This is absolutely fantastic frosting and I'll most definitely use it again and again. Thank you! I followed the recipe to the letter, except I used regular milk instead of evaporated, only b/c I didn't have evaporated to hand. In the future I'd like to try adding additional flavours - maybe cinnamon instead of vanilla, or coffee. Thanks again!

Morning Glory Muffins II

Great recipe - I will make these again. However, they'd be TOO SWEET as written. I only added 3/4 cup sugar instead of the 1 1/4 cups, and next time I will try with only 1/2 cup sugar. They were quite sweet with the 3/4 cup! I also didn't have coconut on hand, so I omitted that (without replacing with anything), and they were still delish. I omitted the vanilla b/c I didn't want these to be overly cake-tasting. Finally, I used olive oil instead of veg oil - works a treat! Note that the batter is SUPER THICK - I was worried at first! But they turned out beautifully.

Oatmeal Pancakes II

These were a lot fluffier than I expected, and I would make them again. Except note that I think they cook faster / burn more easily than typical pancakes. I was really surprised at how fast they bubbled up on the surface, and I even burned a couple (and I make pancakes almost every weekend)! I'll make again though, but just flip faster and start on medium instead of medium high heat.

Chicken Chili

I followed this recipe almost to the letter (just used pasta instead of chickpeas since I didn't have any to hand, and homemade chicken stock), and it is fantastic! Very flavourful and just the right combination of spices. My husband and SIL loved it. Will definitely make this again and again!
