Autumn Spice Ham Steak

Reviewed: Mar. 11, 2008
Really tasty and easy. I opted to cook them in the oven at 450 degrees for 10 minutes, since I was making the Sugar Snap Peas from this site with them. Both turned out excellent.

Sugar Snap Peas

Fantastic! I made these with the Autumn Spice Ham steaks. Cooked both in the oven at the same time. I also, made mashed sweet potatoes with butter and the juice and zest of a lemon...those didn't go over well though.

Filet Mignon with Rich Balsamic Glaze

Reviewed: Feb. 15, 2008
Excellent and super fast to prepare. Be sure to have all your other side dishes ready, before you begin. I was doubtful about the cooking method, but the steaks turned out perfect. We didn't even let them rest after pulling them from the pan. They looked incredible and we couldn't wait to dive in!!! I know that's a big cooking sin, but it was late and we were too hungry :) The only addition we made, which is personal preference, is to add blue cheese to the top, once the steaks were plated. Really an incredible meal and perfect for a busy night. Serve with Easy Asparagus and Mandarin Almond Salad from this site and Rutherford's Cab-Sav....heaven.

My only recommendation is to DOUBLE the recipe, because you will want MORE! These are outstanding.

Pork Chops with Raspberry Sauce

Reviewed: Feb. 1, 2008
Very tasty. If you are using thick cut chops I would recommend putting the lid on while you are browning, mine didn't cook all the through, so I had to zap them in the micro (family was at the table, pounding forks!). They still turned out tender and juicy though. The sauce was excellent, as well as the seasoning.

After-Thanksgiving Turkey Soup

Reviewed: Nov. 26, 2007
This is a good recipe, I felt that it could use some additional seasonings though. My family raved about it, so I will try it again with some thyme and sage added.

Wow! Moist, juicy turkey that everyone raved about. I have never brined before and this recipe was super easy and yielded excellent results. I will use this recipe from here on out!

Homesteader Cornbread

Reviewed: Oct. 29, 2007
I had my heart set on a sweet cornbread (as described), but this cornbread is not that sweet. The texture was fine, but the flavor was lacking. My family liked it, apparently I'm the only one that did not.

Peanut Butter, Mayonnaise, and Lettuce Sandwich

Reviewed: Sep. 18, 2007
My family has always been teased for eating peanut butter and mayo sandwiches! I'm relieved to find out that there are more of us "weird" people out there :) We have never tried it with lettuce though, so we will look forward to that addition. You MUST use REAL mayo (Best Foods) and San Francisco sourdough bread. It's divine.

Really lovely appetizer. There were several people who balked at trying this, but once they did, they loved it. It was simple to prepare and the pecans really make it special.

Christmas Breakfast Sausage Casserole

Great flavor and very easy. I added 2 more eggs and used leftover french baquette instead of white bread. Be sure to get up early because it takes a while to cook.

Mushroom Orzo

Reviewed: Aug. 27, 2007
Very simple, I would choose this over risotto, because of it's simplicity. I used chopped sweet onions instead of pearl onions. Next time I make it I will try a bit of cream to finish it for added richness.

Awesomely Easy Sesame Asparagus

Very good. I think you could get away with just 1 TBSP. of seeds, though. I opted to steam my asparagus. The black sesame seeds really made it a special dish.

Gina's Lemon Pepper Chicken

Reviewed: Aug. 27, 2007
I was surprised at the results of this chicken dish. I thought the chicken would be dry, due to baking without any liquid, but it turned out really juicy and tasty. This recipe is soooo very simple, there's no reason not to try it!
