Steel-Cut Oatmeal

I discovered that my rice cooker has a porridge setting, which I use for steel cut oats all the time. I set it to cook overnight. I tried this recipe, adding the extras in the morning and then letting it set on warm in the rice cooker for a while. This is SO GOOD. I did not add the nuts. I used Splenda brown sugar, and definitely more than a pinch.

Mexican Pumpkin Empanadas

I have made these a few times now. I wll say that mine never come out looking very pretty in color. I have brushed the egg on them and even topped them with a little bit of cinnamon/sugar mixture. This time I decided to put them under the broiler (on Lo) for a couple of minutes. It worked! They came out beautifully browned like I think they should look. (This could just be a problem with my oven though that I have to do this.) However, they alwys taste really good with or without the broiling part.. I don't see how you can make these without doubling the dough. There is always way too much filling leftover. The dough is too soft to put any more filling than I do already. I do add cinnamon to the dough as well. It just gives it that extra special cinnamony taste.

German Potato Pancakes

I've never had these before, so I couldn't wait to try them. They were so good. My nine year old daughter and I couldn't stop eating them. They seemed like hash browns to me, so the idea of eating applesauce with them was weird. We thought we'd try it and LOVED it. The recipe makes way too much for us, so after eating several of them, I put the remaining potato mixture in a bowl in the fridge. I am going to make them tomorrow morning with fried eggs. Hopefully, they will still be good. Oh...we took someone's advice and put the potatoes in ice water right after shredding them. Then we drained them and squeezed them dry before mixing them with the egg mixture. They had started to turn gray, but instantly went back to white and stayed white after the "ice bath". Thank you for a great recipe. We will make it often.

So I accidentally rolled mine a little too flat, but these were still very good. I didn't have enough buttermilk to brush some on top of them. I brushed butter on them. Still very good.

Eggplant -- Easy, Good and Tasty

My first eggplant! I followed the directions until I realized that I did not have any Italian dressing. AND I did not have enough breadcrumbs. I did use Panko. I just love the crunch. Some of mine were breaded with regular Panko crumbs and some with Italian crumbs. I sprayed them with olive oil and sprinkled garlic salt on them. When they were done, we tried one and thought they were good but that they needed more cheese. We added a slice of Mozzarella to each one and then put them back under the broiler. This made them even better. I kept saying I thought I should put more tomato on top of them, but my daughter insisted that I didn't need to. But then she got some spaghetti sauce and started dipping her bites into it. That was good too, but I still think more tomatoes would have done the trick. I can't wait to try this again when I have the Italian dressing. I know it will be even better.

Turkey in a Pot

I love turkey, but I have a special way that I make it for Thanksgiving and don't really want to use that any other time of year. I like to buy the little 3 or 4 lb Butterball turkey breasts and look for different ways to prepare them as I know I will be the one eating it all week. I was hesitant, but this is so awesome! I did not have apple juice cuz it is crazy expensive lately, so I used apple sauce instead. It worked just fine. I will definitely use this recipe over and over.

Tomato Chicken Parmesan

Tasted better than Olive Garden. My kids begged me to make it again. I used Panko bread crumbs. My chicken breasts were a little thick, so I sliced them in half lengthwise. I also used Classico Fire Roasted Tomato and Garlic Spaghetti Sauce. I lined the pan with that new Reynolds foil that has parchment paper on one side. PERFECT!!!

Yummy Sweet Potato Casserole

My favorite. My dad never used to eat the sweet potatoes. This year for some reason he tried them and even asked to take the leftovers home.Then a few days later he brought me some sweet potatoes and asked me to make him some more. I do double the topping.

Jalapeno Popper Mushrooms

Didn't want to bother with cooking two strips of bacon , and I certainly don't need the fat either, so I used two slices of Canadian bacon. I actually chopped it up and mixed it in with the jalapeño mixture after the ten minutes of sautéing. I also used 1/3 less fat cream cheese. These are soooo good. I really like the flavor the Canadain bacon gives to the mixture.

Dump Cake V

I used fresh pineapple because I didn't have any canned. I put thin pats of butter trying to cover every inch of the cake and only needed a stick and a half. I also sprinkled cinnamon on top. Very good.
