Baked Sweet Potato Sticks

My 11 year old daughter and I make these all the time. We add a liitle sea salt and cracked black pepper too. We spray them with olive oil spray to reduce the fat. We gobble them up in no time.

Jalapeno Popper Mushrooms

Didn't want to bother with cooking two strips of bacon , and I certainly don't need the fat either, so I used two slices of Canadian bacon. I actually chopped it up and mixed it in with the jalapeño mixture after the ten minutes of sautéing. I also used 1/3 less fat cream cheese. These are soooo good. I really like the flavor the Canadain bacon gives to the mixture.

Sam's Famous Carrot Cake

I was so disappointed this morning. I spent the morning preparing this to take to my mom's for our Easter party. I followed the recipe exactly, and it came out like mush. The toothpick came out clean and the cake looked burnt. I wanted to cry.

Outrageous Warm Chicken Nacho Dip

Just use the microwave and believe it or not, canned chicken. SO GOOD. We heated corn tortillas and ate it with them. Could not stop eating.

Kahlua® Pumpkin Cheesecake

I made this exactly as is. It was probably one of the easiest cheesecakes I have made. I usually hold back a little on the liquor in recipes, but not this time and I was pleasantly surprised. My dad begged me to make another one and he hasn't even finished this one yet.

Tex-Mex Turkey Soup

I always buy a very large turkey now so that I can make sure I have enough leftover for this soup. I don't use the salsa; I use Rotel instead. It adds however much spice you want depending on if you use mild, medium or hot. I also don't bother with the sour cream. I suppose it adds a little extra special something, but I don't need the calories. I think this is so good. It is basically a turkey tortilla soup. My husband and kids are not soup fans, but they LOVE this one.

Turkey and Bacon Panini with Chipotle Mayonnaise

I used freeze dried red onions, monterey jack cheese, and precooked bacon. I also had jalapeno cheese focaccia bread that I bought at HEB. I had to scale the ingredients in my head for just one sandwich. Everything else I prepared as the recipe called. I am in love with this sandwich. I honestly didn't think I was going to like it because of the spinach, but that was one of the best parts. I will definitely make again for the family. One more thing...I don't have a panini grill. I didn't even grill it. I know I made changes and I hate when people rate things based on their changes, but this sandwich could only be a hundred times better if it was grilled and made exactly as written.

Twice Baked Potato Casserole With Bacon

Yummy! I guess the potatoes called for in the recipe would be like those huge ones you get at McAllister's Deli. I used 5 of the largest potatoes I found in the bag I bought. It wasn't enough potato for a 9X13 pan. I did use the same amount of all the other ingredients and it came out great.

Tomato Chicken Parmesan

Tasted better than Olive Garden. My kids begged me to make it again. I used Panko bread crumbs. My chicken breasts were a little thick, so I sliced them in half lengthwise. I also used Classico Fire Roasted Tomato and Garlic Spaghetti Sauce. I lined the pan with that new Reynolds foil that has parchment paper on one side. PERFECT!!!

Jamie's Cranberry Spinach Salad

Not sure if I liked the sesame seed flavor, but then not sure if that was what made me keep eating it. Sounds weird but this salad is somehow addictive. Don't mix the dressing and your next three days worth of leftovers won't be wilted.

Mushroom Kabobs

I used an orange bell pepper that I had in the freezer and added onion and small red potatoes. After mixed everything, I realized that I did not have any skewers, so I had to put it all in a grill pan for veggies on the grill. They came out fantastic. I did put the potatoes on first and then added the other veggies a few minutes later. So good. I have to admit that the mushrooms were the best part. They got eaten up first.

Apple Carrot Muffins

Used half whole wheat flour and half regular flour, but kept everything else the same. Awesome muffins!!! I think they need more raisins though. I think next time I will just use Wheaties or Fiber One Cereal and add my own raisins just to try it.
