These are good, but I think I will try chopping up my strawberries next time rather than slicing them. Or I may just try blueberries as other reviewers have said.

Strawberry Coffee Cake

Very good. First time I made it, my son and I each had a piece and then I left it on the counter to cool. My sweet toothed dog ate the rest. I could have killed her. I made a double batch in a nine by thirteen pan the second time, and this time, we made sure we got the whole thing.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

These are very good. Did not have orange extract, so I used lemon. Still very yummy. I made six large cupcakes, so I had to cook them a little longer too.

Turkey and Bacon Panini with Chipotle Mayonnaise

I used freeze dried red onions, monterey jack cheese, and precooked bacon. I also had jalapeno cheese focaccia bread that I bought at HEB. I had to scale the ingredients in my head for just one sandwich. Everything else I prepared as the recipe called. I am in love with this sandwich. I honestly didn't think I was going to like it because of the spinach, but that was one of the best parts. I will definitely make again for the family. One more thing...I don't have a panini grill. I didn't even grill it. I know I made changes and I hate when people rate things based on their changes, but this sandwich could only be a hundred times better if it was grilled and made exactly as written.

Big Soft Ginger Cookies

Very Good. I do not understand why, but my first batch was on a shiny metal air bake cookie sheet and the cookies were extremely flat. Then the second batch was on a nonstick dark coated cooking sheet and they came out beautiful. I did not flatten either batch before cooking.

Banana Oat Muffins

These were very good. I did substitute applesauce for the oil. I just don't like that they stick to the paper cups. I was going to just put them in a pan sprayed with cooking spray. really wish I had done that.

Apple Carrot Muffins

Used half whole wheat flour and half regular flour, but kept everything else the same. Awesome muffins!!! I think they need more raisins though. I think next time I will just use Wheaties or Fiber One Cereal and add my own raisins just to try it.

Fra Diavolo Sauce With Pasta

Very good. I didn't even bother with the scallops, but I am sure they would have only made it better. I did add some Parmesan cheese and fresh black pepper when serving as someone else suggested. Will definitely make again. Super easy!

Blueberry Zucchini Bread

The previous reviewers were absolutely right. This is amazingly good. I made the suggested changes to make it less fattening; however, I wish I knew just how much these changes will make to the fat, fiber, and calorie counts. If anybody can help me out, I would appreciate it.

I was so disappointed this morning. I spent the morning preparing this to take to my mom's for our Easter party. I followed the recipe exactly, and it came out like mush. The toothpick came out clean and the cake looked burnt. I wanted to cry.

German Potato Pancakes

I've never had these before, so I couldn't wait to try them. They were so good. My nine year old daughter and I couldn't stop eating them. They seemed like hash browns to me, so the idea of eating applesauce with them was weird. We thought we'd try it and LOVED it. The recipe makes way too much for us, so after eating several of them, I put the remaining potato mixture in a bowl in the fridge. I am going to make them tomorrow morning with fried eggs. Hopefully, they will still be good. Oh...we took someone's advice and put the potatoes in ice water right after shredding them. Then we drained them and squeezed them dry before mixing them with the egg mixture. They had started to turn gray, but instantly went back to white and stayed white after the "ice bath". Thank you for a great recipe. We will make it often.

Cajun Red Snapper

This was good, but I guess I am just not used to cajun seasoning. It seemed like the spices overpowered the fish so much that I couldn't really taste the fish.
