Grilled Tomatoes

Reviewed: Jul. 4, 2012
Very good, but we added a little parmesan after they were done. Also, the skins were a little tough. Maybe it was the tomatoes I used. They were from my mom's garden.

To Die For Blueberry Muffins

Reviewed: Jul. 4, 2012
Yes, these are wonderful, but oh so fattening! Just use applesauce instead of the oil. There really is no difference in taste or texture.

Blueberry Cherry Pie

Reviewed: Jul. 1, 2012
This pie is very good. I love how the ingredients all came together so EASILY. The reviews are all right though. There is way too much cinnamon. I LOVE cinnamon, so I didn't think it would be a problem. I always hate to veer away from the original recipe, as I am not that confident about making changes, but in this case, I will use a lot less cinnamon next time.

Turkey in a Pot

Reviewed: Jun. 17, 2012
I love turkey, but I have a special way that I make it for Thanksgiving and don't really want to use that any other time of year. I like to buy the little 3 or 4 lb Butterball turkey breasts and look for different ways to prepare them as I know I will be the one eating it all week. I was hesitant, but this is so awesome! I did not have apple juice cuz it is crazy expensive lately, so I used apple sauce instead. It worked just fine. I will definitely use this recipe over and over.

MMMMM... Brownies

Reviewed: Jun. 3, 2012
Okay, kind of dry. My kids usually devour brownies, but this time some of them were just left on the counter to be thrown out.

Beaker's Vegetable Barley Soup

Reviewed: May 26, 2012
This is super yummy. I had to use vegetable bouillon, so my came out too salty, but it was still so good. I did not add the chickpeas or the curry because I didn't have them. Mine did get way too thick, kind of like a stew, but it doesn't matter. I will try more broth next time, and of course, regular broth.

Mouse's Macaroni and Cheese

Reviewed: May 13, 2012
I thought this was very good. I had to use Velveeta and Mild Cheddar cheese since i could find cubed American cheese. I also added paprika sprinkled on top. Two of my kids loved it, but unfortunately, the one who would normally eat the leftovers, didn't care too much for it.

This is very good. I used an extra tbsp of honey and panko bread crumbs. I used cracked black pepper and sea salt, which definitely makes a difference.

French Baguettes

Yeast and I do not get along, but I make these all the time for various purposes. I even made them for shrimp po'boys. My kids and husband request them all the time. I use my bread machine too.

Slow Cooker Carnitas

Reviewed: Mar. 5, 2012
I doubled the spices as my roast was a bit larger. I also did not use chicken broth since pork gives out its own juices in the crockpot. I did add chili powder and a can of original Rotel. I think it was great, but I will use more salt and less cinnamon next time. We served it on tortillas, both flour and corn and the kids even added beans and cheese to theirs. Very good.

Tomato Chicken Parmesan

Reviewed: Mar. 4, 2012
Tasted better than Olive Garden. My kids begged me to make it again. I used Panko bread crumbs. My chicken breasts were a little thick, so I sliced them in half lengthwise. I also used Classico Fire Roasted Tomato and Garlic Spaghetti Sauce. I lined the pan with that new Reynolds foil that has parchment paper on one side. PERFECT!!!

Very good. Used creamy horseradish. My 18 year old son told me to use this from now on instead of buying it.

Chocolate Chip Banana Bread II

Reviewed: Jan. 24, 2012
Oh my! I have made about a billion different banana bread recipes, and I can say that this is definitely my new favorite. I used half brown and half white sugar, half margarine and half applesauce, fat free mayo, and only five bananas. Sooo good!

Cranberry Muffins

Reviewed: Jan. 17, 2012
These were so good. I used light sour cream. I cut the sugar to 1/4 cup and used a half cup brown sugar. I added cinnamon both in the muffin and on the top. I substituted 1/4 cup applesauce for half of the margarine. no need to add liquid; they were wonderfully light and fluffy. Just don't over mix as with any muffin.
