Diane's Colcannon
This is not just for St.P day; I made it for Xmas dinner and my family insists it should be a new tradition and I should make it every year. So good! 1/2 cabbage isn't an exact amount so I did equal parts cabbage to potato and it was a success! I used a lot of pepper and found the bacon was salty enough so didn't add much salt. I left the skin on the potato and don't have a masher so this was a chunky dish rather than mashed. I didn't bother with the pool of butter and, having never tried Colcannon before, it wasn't missed. It's a great way to trick the starchoholics into eating some leafy greens. I won't reserve this for St.P day or Xmas, I will make this all year round and recommend it highly.

Grilled Pizza
Perfect! We have been trying to grill pizza all summer with other dough recipes and it was dry and bland. This recipe is perfect for the grill and pizza has never tasted better. It was crispy on the outside and chewy and moist on the inside. We made four small pizzas because they are easier to handle than one large pizza and it was perfection!

Chicken Breasts Pierre
Now I see what all the rave reviews are about; this is fantastic! I had chicken thawed but my cupboards were a bit bare so I searched for a recipe that required common ingredients that I have on hand and this was it. What a surprise; sounds simple but the flavour has depth. We had with pasta but this sauce will be good on rice or potato as well. This is going into the rotation for sure. I would even serve this to guests; it is restaurant quality. Thanks for sharing!
