Buffy's Refried Beans

These are the best homemade refried beans ever! I happened to be cooking bacon for another use, so I used half butter, half bacon grease (no lard on hand). And, I used the liquid from the beans instead of water. Very few dishes in my kitchen escape without garlic, so a good heaping Tbsp. of minced garlic and a small can of diced green chiles sauteed in the bacon grease before adding the beans worked perfectly. And, I topped the beans with grated Pepper Jack cheese. Mmmm.... My family is still shocked that they are getting real refried beans, not out of a can, at home! We even like these better than our favorite Mexican restaurant's. Thank you Buffy.

Dutch Potatoes

We enjoyed these last night for the first time, and I would recommend them to anyone who loves mashed potatoes, and enjoys trying new flavor combinations. Thanks Perlene. The recipe stands well alone, but I added a good bit or oregano and dill, as the meat we were eating with it was seasoned in this manner. I would also recommend cooking the carrots separately; as they take longer to cook than the potatoes. I had to process them a bit before adding in. Overall, very good recipe.

Pepperoncini Beef

How could this NOT be worth 5 stars?!! Delicious. I used sliced pepperoncinis, and slightly more garlic (about 4 heaping Tbsp. of minced from the jar), plenty of Oregano and freshly grond black pepper. My roast was 5 lbs., I wish I would have trimmed the fat off, but was in a hurry to get to work. Put them under the broiler with Pepper Jack (cheddar for DH) and served with creamy horseradish sauce! Tonight I will skim off the fat and make Au Jus for dipping. Next time, I will add sliced onions to the crock pot. Thank you Joyce, for a wonderful recipe - def. a keeper!

Red Potato Bites

Absoluteley awesome. Perfect as an appetizer or with a steak dinner. I don't use parsley however, but dill weed is a must. Adjust cooking time for size of potatoes, but otherwise perfect just as it is.

Home Style Macaroni and Cheese

This was extrememly good, followed the recipe exactly, except for the breadcrumbs. The cream cheese and the mustard give such a good flavor to this creamy cheesey dish. Talk about comfort food! I also sauteed kielbasa, onions and garlic, for those who wanted it mixed in. We have made this several times before, and everyone asks for it when they need some down home feel better food. Thanks for sharing this recipe V!

Garlic Chicken Fried Chicken

Great recipe! Hubby made this tonight, it was delicious. He added 2 Tbsp. McCormick 'Roasted Garlic & Herb' Seasoning. Otherwise followed exactly - except cooking times. It takes longer than 5 minutes per side - around 10-15 with a bit lower heat, so it will cook thoroughly inside and not burn coating (we were frying thighs). Thanks, Tanaquil, for a great recipe.

Fruit Dip VI

I made this for our Mother's Day brunch, to go with a wide variety of fruits - the dip complimented them all and was very easy to make. Got so many requests for the recipe! I agree that the simplicity of the recipe makes it a winner. Thank you for sharing it!

My Mom's Parmesan Chicken

Used skinless, boneless breasts, soaked in Ranch dressing for about an hour first. Didn't have seasoned breadcrumbs, so made crumbs from Ranch flavored almond/rice crackers. And, hubby doesn't like wine in the chicken so left that out. What a surprise! Everyone loved it. Nice and juicy, wonderful flavors. Will make this again for sure. Thanks Christy!

Green Tea Layer Cake

This recipe is everything it says it is. Made it for my daughter's Baby Shower and everyone loved it. I did double the icing, because I made 2 single layer cakes instead of stacking them. Added at least a cup of extra powdered sugar to thicken the icing enough for frosting the cakes. Used loose green tea, powdered in the coffee grinder. (Be sure to grind extra long) Gave the icing a 'mint chocolate chip' look! The taste was wonderful, overall a very good recipe, and a delightfully different taste. Try it!

Jack BBQ Sauce

Great flavors! We like it a bit sweeter, so I added 2 Tbsp. honey. Didn't have any Jack Daniels, so used Hieneken beer instead. Thank you Natalie for sharing this recipe.

Spinach Stuffed Chicken Breasts

This was awesome! Found it worked better to stuff by pounding the breasts to 1/2" thickness, rather than butterflying. Flavor combination was wonderful. Thank you Laurie for posting.

Shepherd's Pie Complete

Good! Spicy variation: Left out the gravy, and added 1 sm. can chopped jalapenos, and used real mashed potatoes. Topped meat and veggies w/ shredded sharp cheddar, and topped potatoes with pepper-jack slices. awesome! (1 lb. ground beef was adequate we thought). Thanks for sharing
