I never sit still... I'm always doing something. After I retired in 2005 I found the joy in cooking as I finally have time. I believe that every day is a good day!!! Some days are better than others!!!
My favorite things to cook
My favorite thing to cook is something I've never tried before, especially when I'm having guests for dinner. I always make sure to inform guests of this in the event that something isn't as appealing to the appetite as it appeared on paper. I've been lucky; no one has ever complained.
My favorite family cooking traditions
At Thanksgiving, we always had the traditional dinner... turkey, stuffing, delicious mashed potatoes with gravy, sweet potatoes, peas and/or carrots, cranberry sauce, olives, sweet and dill pickles, rolls and then dessert... apple pie with a piece of Vermont cheddar, or ice cream and pumpkin pie. I'm sure I've left something out but it has been many years since all of my family was together.
My cooking triumphs
The first time I made Meatloaf Cordon Bleu I wasn't sure how it would work after pounding it down and then rolling it with parchment paper. I was so excited as I moved through the process and finally got it! I've made it so many times now, not only because it tastes wonderful but also because it's just plain fun!
My cooking tragedies
I don't know what I was thinking but many years ago I tried rhubarb pie with rhubarb that had grown right behind our house. It must not have been ripe enough and it was so sour it had to be tossed into the garbage. I haven't tried it since then!

Chicken Pot Pie IX
This was a two thumbs up recipe. There are just two in our family and we made it last for three nights. It was delicious and filling... I used low sodium chicken broth diluted with a little water, sprinkled in 1/2 tsp of cumin and 1 tsp of Mrs. Dash Garlic and Herb spices. Tried to make it as heart-healthy as possible. It is a keeper.

Balsamic Chicken
This chicken dish was truly incredible. I did one thing different because I did not have the "traditional" balsamic vinegar. I used white balsamic vinegar... it tasted incredible and the presentation was just as pretty.

Pumpkin Pie Cake I
I have to say that I had no idea what to expect as I am not a baker but love to cook. I took this dessert to a business luncheon meeting. There was one piece left on the plate... need I say more! It was simple and quick to put together; it disappeared more quickly. I call that success! I'll do this one over and over until I get it right! ?
