Chicken and Two Bean Chili

Excellent! Didn't have cilantro but didn't miss it. I also didn't have any issues with it being soupy at all. My husband and three teenage boys all say this should be our new chili recipe, even though my regular one is awesome! Doubled it last time and there was nothing left over :o)

Red Cabbage and Apples

I'd give this 6 stars if I could its so delicious!! Needed a recipe for red cabbage since we had a bumper crop in our garden this year. Cooked exactly as written, with the exception of using the Fuji apples that I had on hand, though I'm sure it'll be even better with granny smiths!

Eggplant Mixed Grill

Grilled veggies are always wonderful-such better flavor than steamed or sauteed. One easy time saving suggestion would be to use a good balsamic vinaigrette dressing (Paul Newmans is great) instead of making the marinade from scratch.

Grilled Fish Steaks

I'd give this 10 stars if I could! Super tasty on our huge halibut steak, better than our favorite restaurant. Only change I made to the doubled recipe was to halve the olive oil. Forgot to oil the grill which made it a little sticky when we went to turn it but it was such a big steak it wasn't an issue. Definitely a keeper!

Incredibly Easy Chicken and Noodles

A nice alternative to regular chicken soup, though it was too salty as written. I used healthy request versions of the cream soups, low sodium chicken broth and only 1/2 the seasoned salt-had to add some milk to cut the sodium. Really great after being out in the cold and rain for my son's lacrosse game!

Mandarin Chicken Pasta Salad

Absolutely excellent! Only suggestion I would make is there is fresh ginger in the produce section at most grocery stores--it is in a paste form and is wonderful to have on hand!

Artichoke Salsa

Maybe I drained to much from the artichokes but this was really somewhat bland. Tried the addition of some lime juice, but that only helped a little. Ended up adding feta cheese per another reviewers suggestion and that helped. Ended up with the majority left over though. It was wonderful simmered on sauteed chicken breast though!

Chicken Piccata with Artichoke Hearts

Fantastic and easy! Per other reviews I didn't add the juices from the capers or artichokes. I did add a bit of lemon zest since it adds such a bright flavor. Only simmered for about 10 minutes after cooking and I just realized I forgot to add the butter at the end. Even without it the dish was wonderful!

Cream Cheese Penguins

Worth the work! Yes they were a little time consuming but everyone loved them, not just because they were so tasty, but because they added such a pop to the table of party food! Used whipped chive cream cheese for flavor "piping" it in with a sandwich bag with the corned cut out. Had to cut out the slice for the "tuxedo". Didn't bother with cutting out the wedge for the feet as it made no difference. Initially tried to make the scarf as pictured but it was ridiculously hard so I just cut skinny triangles out of the jarred red bell peppers that were skewered below the head. Might try scarves of ham next time? Every single one was gobbled up early on!

Beer Cheese Pretzel Dip

I really thought I'd like this recipe but was disappointed by the overpowering beer taste. I used a mild light beer too. Apparently my guests were of the same opinion as there was a lot left over :o(

Slow Cooker Lemon Garlic Chicken II

So delicious and really easy! Tried it with the addition of the white wine but think it would only need 1/4 cup as opposed to 1/2 cup. Didn't use boullion, used chicken stock and then at the end thickened with a little corn starch as suggested by other reviewers. Definitely only needs a max of 2 hours on high and 1 on low. Will add to the regular rotation!

Vegetable Dill Dip

Just like a mix I'd found at a craft fair once--so delicious! Like other reviewers I only used a 1/2 cup mayo to 1 1/2 cup sour cream. Also used fat free sour cream and light mayo. Second time I made it I used fresh onion--better flavor. Overall wonderful!
