Make-Ahead Marsala Turkey Gravy

Gravy with NO MSG!!! This makes me so happy because store bought broth or buillon contains MSG, but this recipe is super yummy and doesn't call for any of the bad stuff. I cut up the heart of the turkey. Also, if you're short on turkey necks, a chicken thigh and leg are a great substitute.

Granola Cereal Bars

Try it with honey instead of corn syrup, 1 1/2 cups of oats instead of 2, and 3/4 cup of cereal. Must pack down very firmly to avoid crumbling. Husband and son are big fans.

White Bean Chicken Chili

Update: We smoke turkey for Thanksgiving. We dice the leftover turkey to add to this chili. We then put the turkey carcass and skin in a big pot, cover it with water, and boil over night. The next morning, we have wonderful smoky turkey broth to use in this chili. This makes this great recipe even better! --- Great for using up Thanksgiving turkey. I subbed green tomatoes for the tomatillos since I don't have any (but better with them or salsa verde). You can boil the turkey carcass for a few hours to make the broth, too.

Winter Fruit Salad with Lemon Poppyseed Dressing

Christmas 2011. Wonderful and easy. Followed directions. Guests asked for recipe. Held up pretty well for second day left overs. I did add some Bibb lettuce as I had it in the fridge.

Zippy Barbecue Sauce

Tasty. Bottled BBQ sauce usually has smoke flavoring, which is a no-no for people allergic to MSG. I forgot Worcestershire, but it turned out well anyway. To give smokiness I subbed chipotle pepper.

Make-Ahead Turkey Gravy with Porcini Mushrooms and Marsala Wine

Awesome, but a fair amount of subs as Borneo stores didn't carry stuff. 2 turkey necks plus 4 strips bacon, 1/4 cup dry white wine plus 1 t brandy to replace Marsala, 1 c. Kallo vegetable broth from cube, 1 c. brown mushrooms with onion-carrots-celery to replace porcini. Left veg in broth overnight then strained. For sauce, about 1 c. brown mushrooms chopped finally. Absolutely delicious!

Royal Icing III

12-2011. This royal icing recipe has been the best I've tried over the years. Each Christmas, the kids decorate a gingerbread house, but the tricky part has been making the walls stick to each other. This icing is really thick and gooey, and the walls went up easily!

Decorator Frosting

Frosting is sweet, but not sickening so like many others. Works great for decorating cut out cookies. I use with Dora's Christmas Cookies, which with almond extract provide a savory counterpoint to the frosting. (Don't worry. It's still plenty sweet!) I suggest doubling the Decorator Frosting to use with one batch of Dora's recipe.

Dora's Christmas Cookies

Awesome!!!! This is the one!!! It's that true traditional Christmas cookie flavor with both almond and vanilla extract. Usually, it's hard to find a cut out cookie where the cookie and frosting combo don't create a complete sugar overload. Use these cookies with the Decorator Frosting on this site for the right balance of sweet and savory!!! Also, either roll them out thin or bake longer, as the resulting crunchiness is delicious.

Oreo™ Cookie Bark

Kids love this very sweet candy - a Christmas tradition. We use three bags of Ghirardelli 11 oz white chocolate and one 8 oz bag of mini Oreos. To keep the white as white as possible, I suggest first put Oreos in colander to get rid of little crumbs, then mix 1.5 bags of melted white chocolate with all of the Oreos. Then spread into 9x13 pan (not jelly roll). Melt the remaining white chocolate chips and spread on top of the previous mixture.

Butterscotch Apple Dumplings

Fantastic! No major changes. I quartered the apples instead of halving - much better serving size. I put 1-2 teaspoons of the sugar-cinammon-nutmeg mixture into each smaller dumpling. While I had a lot of the sugar mixture left over, I thought it came out perfectly. Sweet, but not too sweet. Also, I forgot them in the oven. They may have been in an extra 20-40 minutes. Well browned, but delicious. I used Winesap apples - a rather tart apple. I brought it to the neighborhood cook out and they disappeared like hot cakes! The doughy part was wonderful.

Apple Brownies

Here's my changes: soften, rather than melt butter and add 1 t. vanilla. Dice rather than slice apples. Add apples and 1/2 c. chocolate chips after mixing in dry ingredients. Spread mixture into pan. Press in 1/4 cup walnuts on half so kids can have nut-free version.

Fantastic! Pecan pie flavor without being overwhelmingly sweet, as crust to filling ratio is about 50-50. Hint: don't bake in stoneware as sides will overcook.

Broccoli and Tortellini Salad

Good, but only after changes and a night in the fridge to let flavors meld. I made 1.5 times the dressing, but used only 1/2 the amount of sugar. I didn't have raisins, so I used craisins which gave it a nice tang. The sunflower seeds I bought were not salted. So I definitely had to add a fair amount of salt - in the 1/2 to 1 t. range. Also, I had used the food processor to shred the onion, which may have released more of the onion juices than desired. Next time I'll chop by hand. Lastly, I bought refrigerated tortellini, but only boiled it for 4 minutes - a touch too chewy at that point - to make sure the pasta didn't fall apart during the mixing and to account for the pasta softening while marinating in the sauce overnight. In the end, it was pretty tasty.

Sugar Cookies

I was looking for a crisp, crumbly sugar cookie. I'm not sure if this it, but they are delicious! We haven't been able to wait until the cookies are fully cooled - maybe they'll crisp up later. If they don't, we still adore this buttery, sugary recipe.
