Excellent at desserts, abysmal at meals. But, I have 2 dogs who adore my cooking no matter what, and a very polite husband. The only way I know he doesn't like something is when he doesn't go back for seconds. Recently we've been trying to lose weight so he never has seconds. Now I don't know what to think!
My favorite things to cook
I love to make decadent desserts, but since the diet began I've been focusing on reducing the calories in my favorite recipes, with spotty results. Some real winners and some real losers.
My favorite family cooking traditions
Dessert for dinner night. My mother started this tradition on Sunday nights when I was little. I'm sure she had no idea she was creating such a sugar monster. I wouldn't have that tradition with kids in the house, but now that it's just me and hubby we love it!
My cooking triumphs
Carrot cake, Tres Leches cake, coconut meringue pie, New York Style Cheesecake with Pecan Praline Sauce, Strawberry Rhubarb Jam. I personally think my coconut meringue is the bomb, but hubby and all my friends prefer the NY Cheesecake with praline sauce. And when I give away strawberry rhubarb jam for Christmas, the empty jars come home with notes attached begging for more. Gotta thank my Aunt Barbara for that recipe!

Coconut Cream Cake I
Oh, wow, here I thought I had invented this recipe! :) I was trying to match a Tres Leches at a restaurant here in Houston and I got pretty close using basically this recipe. I use Betty Crocker Homestyle Frosting Mix instead of whipped cream. It's a marshmallow-ish frosting that's closer to what the restaurant uses. I add heavy cream to the coconut cream/sweetened condensed milk mixture and then I can call it Tres Leches. I've served it as straight Tres Leches for years, and just in the last few years I've started adding coconut. My friend from up north, who grew up with French instead of Spanish, insisted on pronouncing it "Tre-luscious" instead of "Tres Leches"!

Jan's Pretzel Dogs
Oh my goodness! I will be playing with variations of this bread for weeks! There was a little hole-in-the-wall near our house that made Philly Cheesesteak Pretzel Pockets that were to die for. They went under and we wanted to see if we could make our own. We used this dough, but instead of strips around hot dogs we made 6x5 rectangles with a dollop of Philly Cheesesteak filling, folded them over and crimped. With the leftover dough I made a couple of hot dogs. Followed the rest of the recipe with the baking soda bath and rock salt. It was absolutely glorious! My bread machine has never produced such a lovely ball of dough, it's gotta be the beer! Today I'm running the dough recipe through a full bake cycle in the breadmaker to see what it will do. We're guessing the boiling kills the yeast to prevent further rising, so this might blow the top off the breadmaker. I just LOVE experimenting!

Peanut Butter Bars I
In an effort to control our sugar intake, I split the batch and put half in the freezer to take out another time. Well, that didn't help a bit, we just went straight to the freezer for more. Turns out we like them even better that way!
