Summer Beer I

Reviewed: May 10, 2012
Oh my! This is one great drink but be careful, as they pack a punch! I only used 8 oz of vodka and it was enough! For the beer I used Leinenkugel's Summer Shandy (which already has a lemon flavor) and Citron Vodka. It's a keeper!

Shrimp Ramakis

Reviewed: May 10, 2012
We really liked these shrimp ramakis. I was making the recipe for two so I just scaled the recipe down with no problem. Very easy recipe. I used sliced water chestnuts instead of whole. Served on rice pilaf and roasted asparagus. Made for a really good dinner.

Zilla's Guacamole (THE BEST)

Reviewed: May 6, 2012
Giving this a four star rating just because it's not the best BUT it's very good. The feta adds a nice flavor to the guacamole.

Savory Bacon and Crab Bread Pudding Eggs Benedict

Reviewed: May 6, 2012
My husband loves Eggs Benedict and he rates this as a keeper. I made it for dinner as I'm not of fan of crab for breakfast. This makes 2 hearty servings so can be made into 4 smaller servings. It's a rich dish so I would prefer the smaller serving.

We didn't like the Chinese five spice powder flavor. It was just an off taste to us.

Valentine's Fettuccini for Two

Reviewed: Apr. 25, 2012
We thought it was just okay. It was missing something and maybe garlic would help the flavor. The servings are generous, I'd say it serve 4.

How to Cook Turkey

Reviewed: Apr. 22, 2012
I was in charge of making the turkey this last Thanksgiving and I came across this recipe. I followed the recipe exactly and I have to say it was the best Turkey we've ever had. Everyone was amazed how moist and flavorful the turkey was. This will be my turkey recipe for now on. It was perfect, I won't change a thing!

Fluffy Pancakes

Reviewed: Apr. 22, 2012
My only complaint about this recipe is that it doesn't serve 4 as it makes 8 smaller pancakes and my husband and I ate them all! I only made one change, I added 1 tsp vanilla. This recipes is now my go to recipe for pancakes. Light, fluffy and perfect!

Sweet Italian Chicken Sausage and Tortellini Soup

Reviewed: Apr. 22, 2012
We liked the soup but giving it four stars because if you add all the tortellini (18oz) that is calls for it won't be soup as all the liquid is absorbed by all that pasta. I had to add 2 cups of broth but next time I would only use half the tortellini.

I always have Pillsbury Pie Crust in my fridge. This is one of the first recipes for quiche that I made year ago. It always turns out perfect. I like the combination of broccoli and ham. It makes a great breakfast or a light lunch. I like to serve it with fresh fruit. YUM!

I am in love with al fresco Chicken Sausage! It's so flavorful and not greasy. Okay, on to the salad. I really like Caesar salad and the addition of the sausage made a yummy salad. Next time I would add croutons and some fresh parmesan cheese.

Greek Salad with Spinach & Feta Chicken Sausage

Reviewed: Apr. 16, 2012
Loved all the Mediterranean flavor in this salad. I've never thought of using sausage in a salad but this spinach & feta chicken sausage was lean and full of flavor. I forgot to pick up Greek salad dressing so we used Ranch and it was still 5 stars.

Deconstructed Chicken Kiev

We were surprised how much we liked it. I loved the coolness of the tomato and feta salsa with the warm flavorful chicken. The roasted potatoes seemed like an odd side dish for this but it was a yummy dinner! Will make again.

Delicious Mussels

Reviewed: Feb. 26, 2012
I made these as written and would give this five stars but changed second time to adjust to our taste. I used 2 lbs. mussels (not sure of the count), Chardonnay for the white wine (use one that you like to drink), instead of green onions used shallots (I like the mellow onion flavor), I don't add parsley until the end of cooking as it lost it's fresh flavor as it cooked in liquid and served with a wedge of lemon to drizzle over mussels. YUM! So good!
