Fluffy Peanut Butter Frosting

A go to peanut butter frosting. I whipped this by hand with a whisk. I used natural PB and the skinny marj was at room temp. Delish!

Easy Broccoli Quiche

i too refined this a bit. i used margarine to saute the veg. I sauted one small yellow onion-finely chopped, half a red pepper-finely chopped, 1 clove of garlic-minced and 2 cups of roughly chopped, thawed "frozen broccoli". I placed the crust in the pie pan, coated the bottom with shredded mozarella. then evenly spread in the sauted veg over the cheese. My egg mixture that I poured in last- 5 eggs, 1 cup milk and s&p to taste.

Vegetarian Chickpea Sandwich Filling

i used a handheld potato masher to mash the beans. i also used lite mayo... paprika, rather than dill, with some smokehouse blackpepper. Served with a warmed pita. My toddlers gobbled this up for lunch. Thanks for a quick and easy recipe!

Cheesy Ham and Hash Brown Casserole

Easy to make. I used low fat sour cream, no qty changes. I thought it was a bit tangy and that less sour cream would be optimal. my husband ate all the leftovers so since he liked it so much i still rate this 5 stars :)

Strawberry Spinach Salad I

love this!! it's such an easy recipe. i used a popular measure, mix and pour salad dressing container. I served the dressing on the side and used it for multiple days. i keep the dressing in the frig.

Crab Rockefeller

i didn't have cinnamon chex so i used corn chex. still turned out amazing. you could use 6 cups of whatever chex you prefer and this would be great :)

Baked Whole Cauliflower

Blueberry Zucchini Bread

simple recipe. i too used 3 cups of zucchini. i also added the blueberries after i poured half of the mixture into 1 regural loaf pan. To the second half I added about 1/4 cocoa powder and 1/2 cup of chocolate chips. My husband prefers chocolate and I prefer the blueberry. Also great for muffins.

Pumpkin Chocolate Chip Cookies III

wonderful but i replaced the oil with applesauce, added 4 drops of red food coloring, added 1 teaspoon pumpkin pie spice, omitted the nuts. add the vanilla and milk/baking soda mixture to the wet ingredients before stirring in the flour mixture. then i used a large scoop that i use for cupcakes to scoop onto cookie sheets. (they barely change shape when baked) baked at 365 for 12 min. store in the frig for 10 days or freeze for one month.
