Strawberry Shortcake with Cheesecake Whipped Cream

This was delish! Me and husband loved the cheesecake flavor it had, I would rename this 'Strawberry cheesecake shortcake.' Another review said it was a little dry, so I added 1/3 cup(ish) of strawberry preserves to the strawberries, and instead of gently mashing them as the recipe suggests, I pulverized them until it was nice and juicy. I ended up not having any powdered sugar or vanilla on hand, I used a little honey to sweeten it up. I also didn't layer it in a bowl, just used a cake pan with less amount of layers. If you have the patience, let it sit overnight in the fridge to really let the layers blend, because it was definitely better the 2nd day. Give this one a try!

Barbequed Marinated Flank Steak

This was delicious! I didn't use flank steak, I had a flat iron steak. I also didn't have any honey, so I made a stevia/sugar blend, and used minced garlic. Marinated it for several hours and broiled it. My husband and I loved it!

Slow Cooker Oats

So easy and versatile! I prefer mine with some walnuts in it for crunch, have also tried it with dates instead of raisins. A hearty breakfast that will stick with you for a long time.

Burrito Pie

This was quite tasty! Hunting season just finished around here, so I actually made this out of elk burger, yum! It made enough for dinner that night, lunch the next day, and a whole pan went into the freezer for another night. So although this did take quite a bit of preparation, it's saving me from cooking for an additional 3 meals. Followed the advice of other reviewers and doubled the tortilla layers, and also spread the beans on instead of mixing with the meat. I have made similar recipes in the past with corn tortillas, or even chicken, so this recipe is highly versatile.

Shepherd's Pie

Hunting season just ended around here, so I made this out of elk burger. Yum! The only tweaks made was the addition of some rosemary and sage to the meat, and also made real mashed potatoes as opposed to using flakes.

Beef Chimichangas

This was really good! I followed the recipe down to the letter except I used ground elk instead of beef, so I'm sure it was a bit healthier. Ended up cooking it more like 20+ minutes because I like things crispy. Served it on top of a bed of homemade Spanish rice with sour cream and avocado chunks, delicious!

Simply Parmesan Chicken

I thought this chicken was 'meh'. I made the recipe exactly as stated. It was good enough but nothing special. If you made added a tomato sauce and some mozzarella like for a chicken parmesan it would definitely kick it up a lot. As it is written here though, its kind of plain.

Chicken Enchiladas II

As written this recipe is not that good. I followed it 90% (used regular onions instead of green, and cream of chicken soup). It was boring, I expect a bit of spice with my 'mexican' food, and this was designed for little kids, its just chicken, cheese, and tortillas. Won't be making again.
