Roasted Brussels Sprouts

I have been making these for a long time. My whole family- kids included- devour them. Even friends who don't like them will eat these. First, this is a great recipe to tweak and make your own though you don't have to- we all have our cooking styles. Feel free, to put on more spices, we love seasoned salt and garlic powder. I also roast garlic in with the sprouts. The main thing, I feel it helps for bitterness, blanch your fresh sprouts in whatever broth you prefer, for about 5 minutes before you roast. I have never had a bitter or mushy sprout with this recipe, I bake for about 30 minutes. So easy , good for you and delicious. Don't try this recipe with frozen sprouts unless you decrease the cook time. Frozen sprouts are almost always mushy. Thanks for sharing- we love it!

Lentil Soup

We enjoyed this very much. I didn't presoak my lentils at all. The only thing was that for me, this turned out like more of a stew than a soup. It could have been something I did though I followed the directions. It was still really good and awesome for my husbands diet. We did top it with frozen yogurt and green onions. Thanks for sharing.

Quinoa Black Bean Burgers

My hubby is on a brutal diet for his health so I added these to his rotation. I also enjoyed these but I love black beans. The only thing I changed was (like some other posters) adding Oatmeal to hold it all together instead of the bread crumbs. I baked these but I could have grilled or fried, they held together very well after refrigerating them for a couple of hours. These were not dry nor tasteless, they were really tasty and we will make them again for sure. Thank you for sharing!

Portabella Basil Sub

I whipped this up for my hubby who is on a vegetarian cleansing diet from his doctor, so we skipped the bread. This recipe could not be any easier and it was filling for my hubby, who is a carnivore, so this diet is killing him. I would definitely make this again- the flavor was great for us with no changes necessary. Thanks for sharing!

Spicy Slow-Cooked Chili

I made this exactly as written except we shook our own Cayenne on the Chili since my kids aren't spicy fans and I added about a teaspoon or so of Cumin. The chili had great flavor and wasn't thin at all. I didn't add any extra juice and at the end of the cooking time, the chili was nice and thick. Very tasty and easy to make. I'm ashamed to say it, this was my first time making chili without a spice packet and it is the recipe I will make from now on. Thanks for sharing!

Creamy Taco Roll-Ups

I have been making these forever. They are always a hit. The key to this which makes them easier to cut, is to refrigerate for about 4 hours if you have the time. These get better the next day as well. Great recipe that pretty much everyone loves.

Quick Pasta Sauce

This is awesome. It is so easy. The key is use good canned tomatoes. I use the Cento brand in a yellow can. I add Italian seasoning along with the basil and a pinch of sugar for a little sweetness that we enjoy in our sauce. This is as close to a fresh made sauce as it gets when you don't have 4-8 hours of sauce cook time. Way better than a jar IMHO. I will make it again when I need a dinner in a hurry. Thanks for sharing.

Easy Chicken Rice Casserole

I think there is a total error in this recipe. I have made it a couple of times and the second time was definitely better than the first. The first time I stirred the rice every 30 minutes. Don't do that just leave it tightly covered. The second time I didn't stir, left the foil on and after 60 minutes, chicken wasn't done and rice was crispy. I put it in covered for another 30 minutes and it was perfect. Both times my chicken was raw. It was bland the first time when I followed the recipe. The second time I generously added the spices which I usually do and it was better- I added Vegeta (Serb here), Montreal Chicken Seasoning and garlic powder in addition to the recipe spices which came out great. I would say tweak this to your tastes. Good base recipe.

Slow Cooker Baked Beans

All I added is green peppers and bacon- delicious with or without the additions. Everyone raved about it. It's also a great way to use up some pantry items. Thanks for sharing- I will most definitely use this again.

Mujaddara Arabic Lentil Rice

Ok first of all this recipe was shared by someone who has a cool name- Osiris. :) Now that I have that out of the way- this was delicious. I didn't have All Spice (which some reviews recommend) so I used Pumpkin Pie Spice- kind of the same thing. Sounds weird but it came out delicious. I have no clue if this is authentic or not but it's pretty Middle Eastern in taste and delicious. Yeah for non soup lentil recipes. Thanks for sharing.

Penne with Chicken and Asparagus

Easy and awesome. I never follow spice directions on here though I always spice to our tastes which means a lot of garlic powder. :) You can throw tons of stuff into this- sun dried tomatoes are amazing as well as red peppers or any other sweet pepper- mushrooms are a go too. I always serve it with whole wheat or brown rice pasta. Thank you for sharing- this isn't bland at all but light and healthy.

I made this as written and we thought it was a bit bland in the end. If I could I would give this 4.5 stars. The meat was very tender which was nice. My whole family loved it but I didn't. Next time I will season it up a little better. Otherwise, great winter comfort food.

Cinnamon Ice Cream

Loved this!! Save yourself the heating step and grab some pasteurized eggs. That way no scrambled eggs. I always make ice cream with the whole egg as well not just the yolks. So easy- throw it in an ice cream maker and your good. This ice cream is awesome on top of pumpkin pie. Nice recipe- thanks for sharing.

Pumpkin Gingerbread

Wow this is good!! I think it's the perfect balance of pumpkin and gingerbread. The second time I made it I changed it up a bit- I used 1.5 cups of sugar and .5cup of brown sugar with 1 tsp of Mexican Vanilla. Either way this recipe is amazing and would be a fantastic addition to a holiday dinner or even given as gifts. This is probably the moistest quick bread I have ever made! Love it! Thanks for sharing!

Chicken Souvlaki Gyro Style

I'm not sure how to rate this dish and I'll tell you why. I printed the recipe to make it and it printed weird so I marinated the chicken in the marinade with the garlic, dill, and Greek seasoning added. I have to say it was fantastic and will make it again with my goof up. Everyone loved it. I served it with Yia Yia's Tzatziki from this site because I can't cheat on that recipe. A good long marinade is the key- I marinated for 8 hours. Thanks for sharing- great flavor in this recipe.

Herbed Greek Roasted Potatoes with Feta Cheese

Before I write this I just want to clarify something being Greek and all. Greek Potatoes are usually marinated for a long while with lemon juice and oregano- that's pretty much it. They aren't really supposed to be crispy like a regular roasted potato. Rather soft on the inside with slightly crispy edges kind of soggy. It's all about flavor with them. That being said- this recipe was fantastic- despite not being traditional. I followed the recipe exactly- had plenty of liquid and cooked for the specified time. The Feta makes it as well. I will most definitely make this again. Thanks!
