Perfect St. Patrick's Day Cake

I made this recipe into cupcakes and goodness they were SO good! I dipped the tops of each cupcake in the ganache and let it dry for a bit before icing them. I used 3 T. Bailey's plus 1 T. water for the icing. I don't really like butter icing so I did half butter and half shortening. Everyone raved about these and I have already been asked to make them again! Thanks for sharing!

Hearty Hash Brown Dinner

This is pretty much a throw and go dish! I sauteed onions and garlic with the ground beef and omited the french fried onions (personal preference). I used fat free cream of mushroom mixed because I didn't want any chicken "flavor" in the dish. I threw in some canned mushrooms as well. Turned out great!

I made this in a crockpot for our Christmas day buffet. It was really good. The addition of fresh veggies makes it taste great! I added more jalapeno because we like it spicy!

Aunt Teen's Creamy Chocolate Fudge

Wonderful fudge! So rich and creamy! We don't like really thick pieces so I poured the mixture into a 9 x 13 pan... still made great pieces of fudge! Thank you for sharing!

Soda Cracker Candy

Very good! I cut the butter and brown sugar to 1 cup. I believe my jelly roll pan holds roughly 36 crackers. Next time I will spray my foil generously as it was a bit difficult to remove the foil from some parts of the candy.

Chicken and Noodles

I love the versatility of Campbell's recipes! You can interchange some of the basic ingredients and still have a great recipe! I didn't have dried egg noodles so I used Rames brand frozen egg noodles. I added some thyme and boiled my egg noodles in chicken broth. So good on a cold winter day!

Fiesta Chicken and Rice Bake

This was a quick and easy weeknight dinner! I chose to cook the chicken prior to assembling the casserole and add a can of black beans. I cooked the chicken on the grill to speed up the oven time. It cut the time to 25 min. We ate it in tortillas with additional salsa and sour cream! Yum!

Beef and Bean Crescent Burritos

These were very easy to make! Family devoured them in minutes! I made them the night before since we wouldn't have time for me to prepare a meal the next day. Reheated them in the oven and they were perfect!

Chicken 'N' Chilies Casserole

Very quick and easy to make! It is also fairly versatile too. I discovered as I was making it, I didn't have any green chilies so I added a can of Rotel and a bit of salsa to it. Came out great!

This was very good and very quick to make! I did use olive oil in place of the butter to saute the onion and I added some garlic to the pan. The family ate it up... will definitely make again!

Veggie Pizza Faces

This was so much fun to make! We used bell pepper, mushrooms, black olives and pepperoni (little man has to have his meat on pizza ;)). We will definitely be making these again. Think we are going to try "Mexican" style using tortillas as the base and Mexican style toppings. Thanks for the wonderful idea!
