I tried a new recipe today for an eggplant lasagna.A friend swore by it, so...I had to see if it was true. Lately I've been trying to limit my wheat, flour, and red meat but I miss my famous lasagna.

We have so many bananas here in Trinidad! Often the heat in the kitchen during the day makes them ripen very fast. Personally, I like bananas at the "just ripened" stage. Once they get too many spots or browned skin, I put them in the fridge and make banana
