Easy White Chicken Enchiladas

Awesome!! My 3-year-old even scarfed it down! I did grill my own chicken, used reduced fat cream cheese, and used whole wheat tortillas to make it a little bit healthier. This recipe will be a must for Mexican food night for our family.

Mexican Rice II

LOVE this recipe!! I added a tiny bit of bacon bits for some added flavor (just a personal preference, it didn't need it) but otherwise I followed the instructions exactly. It was better than a lot of restaurants' rice I've hadd.

Buttermilk Pie IV

Super easy and absolutely wonderful! VERY sweet and great texture. You can also bake at 350 degrees for the whole hour if you prefer a completely creamy pie with no crispy top.

Amber's Sesame Chicken

Wow! This was relatively easy and came out great! I did substitue a little bit of ginger for the five-spice because I couldn't find it. Add a little bit of sesame oil into the dish and it is PERFECT!

Too Much Chocolate Cake

This is by far the richest and moistest chocolate cake I've every had. It was wonderful! I put a little bit of chocolate icing on the sides and topped it with fresh raspberries and powdered sugar. Beautiful!

BBQ Meatballs

This recipe was exellent! I left out the pineapple (I'm allergic) but they were still wonderful. I'm used to a sweet BBQ sauce, but this tangy BBQ sauce was wonderful. The turkey with the beef made a less fattening and still delicious meatball.
