Actually Delicious Turkey Burgers

Reviewed: Jun. 30, 2013
Made these last night.. delicious and easy! Even my picky son who eats NOTHING ate 2 of these burgers. I did add a splash of both worcheshire (sp?) and soy sauce. Also instead of minced garlic and onion I used powdered versions since my son isn't a fan of "chunks". Also used dried parsley instead of fresh. Before pan frying, I lightly coated each burger with some additional bread crumb just to help hold together as well as for a bit of texture. Used a whole egg also rather than just egg white. They were super easy to make, juicy and delicious. Didn't even really need any condiments, they were that good. Will definitely make again.

Buffalo Chicken Wings II

Reviewed: Feb. 14, 2013
Great alternative to higher fat, fried wings. I make mine exactly the same except I do not use butter on the baking sheet but instead use parchment or non stick foil to avoid the wings sticking. I also flour the wings and let them hang out in the fridge for at least an hour so the coating can adhere. I found baking at 400 (instead of 350) for approx 45-50 min, depending on the size of the wings and also flipping halfway through, they come out fairly crisp this way, very closed to the fried variety. Toss with sauce and good to go. You can also pop them back in the oven or under the broiler after saucing for extra crispiness and baked in sauce flavor.

Slow Cooker Beef Pot Roast

Reviewed: Dec. 29, 2012
Not technically 5 stars YET but I just put everything in the crock pot and looks and smells HEAVENLY! Can't wait for dinner. Only changes I made was instead of chicken broth, used half beef broth/half red wine (all I had on hand). Also added a pinch of red pepper flakes in with the herbs since we like our pot roast spicy! Looks good!!!

Firecracker Grilled Alaska Salmon

Reviewed: Apr. 23, 2012
Delicious!! Made this last night and it was great. Will definitely make again. The only changes I made was to use olive oil in place of peanut oil, and honey in place of brown sugar since that's what I had on hand and also added a squirt of harissa sauce (spicy asian sauce, similar to srichacha). I was only able to marinate the fillets for about 4 hours or so. The flavor was there but faint. Next time I'll make sure I marinate longer.

Chili Sauce Chicken

Reviewed: Jan. 9, 2012
This was just ok. Was a change of pace from my usual chicken but nothing spectacular. Found it to be slightly bland and the chili sauce was a bit overwhelming for me.

Pretty Chicken Marinade

Very tasty! I substituted minced garlic for the garlic powder and also added some dried herbs (basil & oregano). Delish! Will definitely use this again.

Fiesta Chicken with Black Bean Salsa

Reviewed: May 10, 2011
Made this the other night and it was very tasty and very quick and easy. Substituted vegetable oil for canola and lemon juice for lime juice (all I had on hand) and turned out very good. I did tweak the salsa a bit with some spices and added some diced tomatoes with chilies since I thought it was a bit on the bland side on it's own. Will definitely make again!

Pork Chops with Jalapeno Jelly

Reviewed: Mar. 3, 2011
This was very good and very easy. Only change I made was substituting cilantor for rosemary (hate it). Next time will make them separately from the sauce as my broiler and smoke detectors did not play nice with this recipe ;)

Spaghetti Squash Saute

Reviewed: Feb. 28, 2011
I was looking forward to this based on the previous reviews but it turned out to be a clumpy mushy watery mess and extremely bland even though I followed the recipe exactly. Trying to doctor it up with seasonings did not help either. Sorry :(

Easiest BBQ Pork Chops

Reviewed: Feb. 8, 2010
This was pretty good and definitely very easy. I did make some modifications based on what I had available and personal taste. I used cream of chicken soup since that's all I had. Also did 1/2 cup of ketchup and 1/2 cup of BBQ sauce. Also threw in some cayenne and a splash of white wine vinegar to give it an extra kick. I liked the fact that the soup seemed to temper the BBQ sauce so it wasn't overpowering. Also, I used boneless pork chops and cooked on low for 4 hrs. Chops were very tender! I will definitely keep this around. I'm only giving it 4 stars because without the mods that I made I think it would be too bland and ketchup-y sweet. Also, although the sauce was good, I would have liked it to be a bit thicker. All in all a very easy and good recipe.

Ultimate Twice Baked Potatoes

Reviewed: Jan. 24, 2010
Totally yummy.. mine didn't come out as good as they could have. Should have cooked the potatoes more, but mine were especially large. Also, didn't beat the filling mixture, was too lazy and just used a masher which worked fine. Definitely good, will definitely make again and again and try differentv variations of fillings.

Cabbage Roll Casserole

Reviewed: Jan. 18, 2010
I gave this a 4 as I made it, as written it would have probably been a 3. Simple & easy but very bland as written. Like others I seasoned the beef while browning with s&p, red pepper flakes, worcheshire, garlic powder and tomato paste. In the end it was very good, just like cabbage rolls without the hassle. Will definitely keep working with this one and make again.

This is pretty much the recipe I normally use but in my version I use homemade tomato sauce and also add a mix of browned ground beed & italian sausage to the mix which adds a depth of flavor.

Easy OREO Truffles

Reviewed: Dec. 24, 2009
These to me were just OK.. not bad but not spectacular either. More trouble than they were worth really. I followed the recipe exactly with the exception of rolling the balls in the extra crumbs, didn't do that. Also used a handful of holiday peppermint oreos along with the regular ones. All they really tasted like was mushed oreos, maybe I did something wrong? Also, I made half last night and half this morning. The half of the mixture that I put in the fridge overnight kinda fell apart and was hard to roll into balls this morning. Probably won't make again.

Decadent Rum Balls

Reviewed: Dec. 19, 2009
Delicious but after following the recipe exactly I found that the mix was too mushy to roll into balls. I fixed by adding about 10 more crushed wafers and a handful of chopped nuts. I also used Captain Morgan's Spiced Rum. I rolled some in coconut, some in a mixture of the crushed wafer/pecan mix and some in candy cane shaped/flavored sprinkles. Perfect!

Roasted Brussels Sprouts

Reviewed: Nov. 23, 2009
This is exactly how I prepare brussells sprouts always.. with one minor exception, I do halve them. Depending on my mood, I'll vary it as the possibilities really are endless. Sometimes add chopped garlic, sometimes bacon & onion, sometimes a splash or two of balsamic vinegar. Perfect!

Tangy Slow Cooker Pork Roast

Reviewed: Nov. 9, 2009
Made this yesterday and it was really good. Gave it 4 stars because it was kinda bland so I added some ingredients. Subbed the red wine vinegar for apple cider vinegar and the ketchup for chili sauce. Also used minced fresh garlic instead of garlic powder. Omitted the sugar altogether based on previous reviews and added about 1/2 tsp of dried rosemary and a splash of worcheshire sauce. My roast was bone in loin (just under 3lbs) and frozen..threw in the crock frozen and cooked on high for the first 2 hrs and low for another 3. Not really at all the recipe as written but a great starting point. Very easy to customize to individual tastes. The pork was super tender & juicy, not dry at all and flavorful. Used the juices in the crock and a little Wondra to make an awesome gravy to serve with it. Will definitely make again.
