Seared Scallops with Jalapeno Vinaigrette

This dish was exceptional. We made it for friends and used a cast iron skillet on the grill burner. Applause all around. We did kick up the heat a little though as we all enjoy spicy. Will definitely make again.

Brussels Sprouts in a Sherry Bacon Cream Sauce

Being that my husband and I are/were both skeptical about brussel sprouts, I have to say this recipe and sauce were amazing. I used baby bella mushrooms and followed others recommendations to roast 10 min, flip over and roast another 10 so they were not too aldente'. This is definitely going to be in my normal rotation.

Slow Cooker Barbecue Ribs

Wonderful recipe. I made a little change and used 1 1/2 C of chili sauce and 4 dashes of hot sauce. I also use country ribs because they are meatier and juicier than baby backs. I often get asked to make this recipe when we have get togethers with friends and/or family.

Crunchy Chicken Salad

i use a lot less relish and add chopped red onion. If you use this recipe as a base, you could completely make it your own with ingredient changes. Easy and very tasty.

Grilled Pork Tenderloin with Balsamic Vinegar

We are campers, so things that are good on a grill and feed more than 2 is a must. We made this on Halloween weekend and it was fantastic over the charcoal grill. The outside browned nicely and the meat was very tender and the flavors of the marinade were there, but not overpowering. I got 6 thumbs up that night for dinner, including my own. This is going to become a regular camping meal for us.
