About this Cook
My boys recently left the nest and headed for college, my BF of many many years recently moved in, so I'm learning to cook for 2 instead of 4. So far, I'm doing okay, but I miss cooking for my kiddos. I love the weekends they come home and I can make all of their favorites.
My favorite things to cook
With my kiddos gone most of the time, and a fairly empty social calendar, I am cooking more and rarely making the same dish twice. I also love finding new twists on old favorites and searching through my recipe box for recipes I want to try but knew the kiddos wouldn't eat.
My favorite family cooking traditions
Every Christmas my entire family gets together to make tons of cookies. All of my aunts, cousin's, their kids, my papaw and close friends. Since I live halfway across the country and haven't been able to participate for several years, I started having my own "cookie day" with my friends and their children. I love having everyone over and the smell of all the baking cookies is so homey and comforting.
My cooking triumphs
I consider any meal that my pickiest eater will eat to be a triumph.
My cooking tragedies
I'm sure we've all done this...I was cooking a special meal for a special person in my life and accidentally turned up the wrong burner and burned the main meal to the point that it's inedible. I HATE it when that happens. LOL

Orange and Cinnamon Tequila Shot
Who doesn't like a shot of tequila for a quick buzz? I like the taste of the cinnamon before the tequila. I recommend using a good quality tequila. :)

Refreshing Lemon-Ginger Dressing
Such a refreshing light dressing. I served it over a simple salad with romaine, broccoli, onion, and bell pepper. This dressing would be wonderful over a salad with some chopped cooked chicken breast.

Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)
BF and I really enjoyed this. I had some leftover pork chops that I needed to use up. They were already breaded so I just seasoned them with the cumin and warmed them in the dutch oven. While the pork was browning I cut up fresh green chilies and used these instead of the canned. After the pork was warmed up, I removed it from the pan and added a little more olive oil then tossed in the jalapenos, fresh green chilies, and onion all at once - sauteed until everything was tender, then added the chopped tomatillos, garlic, cilantro, marjoram and extra cumin. I also used broth instead of water and added an extra 1/2 cup because I wanted more of a soup texture. There are some wonderful flavors layered on top of each other in here and I will make this one again. I ate mine with a dollop of sour cream and some fresh cilantro for garnish.
