About this Cook
I'm a homemaker who recently moved to a charming and secluded community on a mountain. I used to love to bake but moving from sea level to 5500ft has made baking very frustrating.
My favorite things to cook
I'm addicted to my slow cooker.
My favorite family cooking traditions
Sadly, there are no cooking traditions in my family but I'm attempting to make some so that my son has something to carry on.
My cooking triumphs
I don't really challenge myself when cooking so I can't claim any triumphs.
My cooking tragedies
Thankfully I don't think I've had any cooking tragedies.

My Chili
Nice chili recipe. I made a few adjustments to suit our taste. Subbed 2 cans of Rotel tomatoes with green chilies for 2 cans of the stewed tomatoes, added an extra can of kidney beans, added an additional tablespoon of chili powder and also decided to throw in a 1 1/2 teaspoons of cumin because I LOVE cumin. Really good!

Slow Cooked Corned Beef for Sandwiches
The best recipe I've tried for corned beef. The beer gives it a great added flavor. I used the meat for sandwiches and everyone loved it. This is now my go-to recipe for cooking corned beef.

Chocolate Cream Pie II
Outstanding! I read a lot of the reviews and took the following advice... 4 egg yolks, 4 tablespoons of corn starch and replaced 1/4 C of the milk (I used 2C half-n-half and 3/4 C of 2% milk) with Baileys Irish Cream. The pie set up perfectly. I used an Oreo crust and made my own whipped cream. Taking the 10 minutes to do it is absolutely worth it. This was by far the most decadent, rich and amazing chocolate pie I have ever had. A small slice goes a long way!
