Breakfast Pies

Reviewed: Nov. 13, 2011
When I have made other recipes calling for premade biscuit dough, including those that morph into dumplings, I avoid the flaky layer type and use the cheap plain biscuits. In my store they come in a shrink wrapped package of 4 cans in blue packaging. Definitely the lowest cost ones in the case. You won't have this problem with these.

Banana-Nut Corn Bread

Reviewed: Nov. 13, 2011
I made this recipe in muffin form. Followed the recipe with the exception of substituting one half of the milk (1/4 cup) buttermilk. Baked 20 minutes at 375 and took out of oven when toothpick came out clean. Tasted good, very corn muffin flavor with essence of banana. Texture was a little dense/gummy but not enough to keep me from eating them and sharing with friends. I think if left in oven any longer they would have turned dry and leaden. I will make this recipe again because it turned out decent, did not have a multitude of ingredients and did not have to make a big mess in my kitchen. In and out. Good muffin. Thanks.

Steff's Shepherd Pie

Reviewed: Nov. 18, 2011
I thought it was okay, agree with most other reviewers meat needed to be seasoned. I think it was the cream of mushroom soup that left me feeling so so, I guess I prefer the tomato soup version I am used to. We ate it all up anyway.

Sweet Restaurant Slaw

Reviewed: Nov. 18, 2011
This is so good, does taste like the take out chicken place slaw. Only suggestion is to chop the cabbage et al more finely in the food processor. Will make again and again.

Baked Tomatoes Oregano

Reviewed: Nov. 18, 2011
Made this as a side dish when I had a beef/chicken/shrimp fondue party. Everybody loved them. I chose to serve these because they did not need to be piping hot and still tasted good even as they cooled off as we were cooking our meat in the pot.

Italian-Style Swiss Chard

Reviewed: Nov. 18, 2011
It was good but not outstanding. First time I have cooked chard. I think I like escarole better.

Ratatouille Pasta

Reviewed: Dec. 14, 2011
I followed this recipe up to the pasta step. I did not add the pasta or the cheese. I wanted to pair this up with some leftover Basmati Rice (from this site). I tasted the dish and it was excellent. 5 star. I indulged myself and added a few sprinkles of curry powder. Boosted it to 10 stars. I gave some to a neighbor and he loved it. Thanks for a really good, nutritious, economical recipe.

Indian Style Basmati Rice

Reviewed: Dec. 15, 2011
I thought it was quite good. I don't know that I will wash/soak rice next time. I kinda like it sticky. I thought the cinnamon was a little heavy but my dining companion thought both the cinammon and the cardemon were to subtle. Either way, I liked it, I will make it again. I served it on the side with the Ratatouile from this site. Great combo.

The Best Thai Coconut Soup

Reviewed: Dec. 27, 2011
So good! I added a little curry powder and about a tsp. of lime zest. I was amazed to see the difference in brands of canned coconut milk. I picked up several cans of it on the aisle with the powdered and shelf life milk. Then I saw it in the chinese food section labeled Thai Coconut Milk and bought several there. Upon opening it was clear that they were different. The Thai product was creamy and thick on the top ( I have seen that referenced in other Thai recipes) The Thai product was clearly superior. Look for it. I will make this again. It was great without noodles or rice, very filling in and of itself for a meal for me.

Cocktail Meatballs

Reviewed: Dec. 31, 2011
In reference to the reviewer who said cran. sauce comes in 16 oz. cans, it also comes in 8 oz. small cans, many brands. I buy it all the time because I often eat alone. Loved the recipe and the change from grape jelly. I know it is faster to use store bought frozen meatballs, but I find the texture to get spongy in the crockpot so I make the extra effort to make them myself.

Crab Imperial II

Reviewed: Dec. 31, 2011
what a disapointment I should of give more attention to the other reviewers. Thank goodness I did not offer this to guests as the submitter suggests. It was way too spicy, that kind of hot itch in the back of your throat/makes you cough kind of hot. It was dry and crumbly. Needed way more moisture from somewhere. Seems to be calling out for maybe cream cheese/ half and half, something creamy.

Spicy Chicken Thai Noodle Soup

Reviewed: Jan. 4, 2012
It is spicy, but that is they way it was presented, and I did not have a red chili pepper so I used a green jalepeno. I added 1 stem of lemon grass, macerated , and I used chicken thighs, other than that the recipe was as given. I tasted it, it was good, and then a lightbulb went off, add fresh cilantro as a garnish/finishing touch. Made all the difference in the world. Will make again. Maybe cut back a little on the hot spices. Definitely add the cilantro again. Good recipe. Thanks.

Applesauce

Reviewed: Jan. 5, 2012
This should be a 10. It is so simple and so natural. I ate it hot and I loved it. Only thing I did different was a squeeze of lemon juice, a pinch of salt and cooked it in the crockpot for 4hours on high. This recipe will be one of my classics.

Stuffed Peppers for Two

Reviewed: Jan. 20, 2012
I make mine exactly as nccooker has detailed in his comment. Not only does cutting the pepper lengthwise keep them from falling over, it leaves more pocket to stuff with the meat mixture and more suface to add cheese. I also precook the peppers a little in micro. No need to deal with boiling water and pots.

Slow Cooker Chicken Taco Soup

Reviewed: Jan. 20, 2012
It was kinda watery. The spice was there, but it still seemed to lack something. Maybe cumin or oregano. I won't make it again. Gave most of it to my neighbor

I have made this recipe and loved it, only change was to used fresh minced ginger, since like so many I did not have pickled ginger. This is in my stack of favorites.
