My favorite things to cook
Do I have to pick one thing as my favorite? It really depends on my mood some days it is cooking up a scrumptious dinner while the next it is baking cupcakes.
My favorite family cooking traditions
From big breakfasts on the weekends to holiday meals food is a big part of so many things in my families life. It brings us together. We work together creating meals just as we sit together when we eat.
My cooking triumphs
Currently Gluten Free Cooking and Baking. While I still cook and bake foods full of gluten for my family and friends, I am gluten free. It scared me at first but now I can make meals and desserts that you cannot even tell are gluten free!
My cooking tragedies
Just keep me away from box mac n cheese or ramen noodles. It isn't a pretty sight.

Corn in a Cup (Elote en Vaso)
Corn in a cup is something we would sell out of at concessions stands for my kid's track team in El Paso. I have to say the basics are there but the crema and lime juice per cup seemed a bit much but this is something that can be customized per a persons taste. Typically from when i've seen corn in a cup sold you can make your cup how you like for the most part. I instead mixed crema and chili powder together and dalloped on top of each cup of corn (and then added the cheese and hot sauce) and topped with a lime wedge to squeeze on top. I also sprinkled Tajin on top instead of salt.

Grain-Free, Kid-Approved Chocolate Chip Cookies
These were kid approved and good but not a typical chocolate chip cookie.... more so a tasty almond cookie with chocolate chips. I did run out of almond flour so had to sub in less than a cup of rice flour to make up the difference.

Slow Cooker Cilantro-Lime Chicken Tacos
My family devoured the chicken. I did omit the wine. I would have used chicken broth instead but felt it wasn't needed. The chicken produces a ton of juice while cooking. I also did not use 8 limes. For cooking I used 4... 16 lime quarters and then I quartered 2 more so my family could add as much or as little lime as they wanted.
