About this Cook
I am happily married and living in Scarborough, Ontario. We have purchased our retirement home, although it will be many years until we retire, we go there every weekend and for vacations. This is where I do most of my cooking for the week.
My favorite things to cook
I love to cook different things on the weekends, when I have time and we are in the country. I love Mexican, Greek and Thai foods. Anything with lots of flavour.
My favorite family cooking traditions
The holidays are always a good time for cooking. We have the usual, turkey and ham and then we each bring a dish to my parent's house, so there is an ecclectic selection of foods.
My cooking triumphs
Anything that is really easy to make but looks like it took a long time, like the Mexican Shredded pork from this site. It's delicious and the slow cooker does most of the work.
My cooking tragedies
I tried to make cupcakes to take to my husband's family get together. My oven's bake element was way too hot, so they burned. That's when I learned, and got an oven thermometer.

Charley's Slow Cooker Mexican Style Meat
This recipe was very good. I used an eye of round roast that I cut into 2 inch cubes. I blended the onion, garlic and peppers with the spices and hot sauce. An hour before serving, I shredded the beef and added it back to the crock pot to absorb more of the sauce flavours. I served this with diced tomato, jalapeno, onion, and lettuce on whole wheat wraps, burrito style, which we grilled on the panini press. I found that the meat could have been spicier, so next time I will add more hot sauce.

Quinoa Side Dish
I loved this recipe but I found the thyme a little overpowering. I followed other reviews to saute the onions at the beginning and I added some orange pepper to the onions. I tasted it to see whether it was done and loved the flavour. Once I added the thyme, garlic and parsley and tasted again though, it wasn't as good. I will definately make again but leave out the thyme.

Tzatziki
This Tzatziki was really good, but I did cut back on most of the ingredients. I used 4 cloves of garlic, 2 tbsp. of olive oil and 1 tbsp of vinegar and it tasted really good. It was still a little garlicky, so I will cut back to 3 cloves next time. Also, there is a lot of cucumber in this recipe and the taste is predominant. I think a small cucumber would be better. I also added some dried dill to mine. Thanks for the basic recipe.
