Butterscotch Pumpkin Pudding Cake

Fantastic! I made this cake with a whole can of pumpkin, and baked for 60 minutes at 300. I drizzled a cream cheese glaze over it, and it was delicious!!! My boyfriend said it was the best cake he has ever had!

Baked Potato Skins

Awesome! But of course I did things a bit different. 1. I used 8 medium red potatoes 2. I used colby jack cheese instead of cheddar 3. I used choped pepperoni instead of bacon 4. No green onions & no sour cream 5. Added homemade avocado salsa Mainly I referred to this recipe for how to cook the potato skins in order to create a delicious vessel for my chosen toppings, and I gotta tell you, the potatoes turned out way better than I had anticipated! The mixture you brush over the skins is super good. They were perfectly cooked at the end, with just the right amount of crispiness. I am definitely going to make this again!

Quinoa and Black Beans

I already had quinoa cooked up, so my cooking steps were a bit altered. I started with the cooking the onions & garlic in the pan, then added the seasoning, corn, black beans and cooked quinoa. And right before removing it from the heat, I added the cilantro. It was quite tasty!

Baked Tofu Bites

Wow - this was great! I used Tamari instead of Soy Sauce, and I used garlic salt instead of garlic powder (it's all I had). I only needed to bake it for about 5 more minutes after flipping them over. And after they were done baking, I tossed them in a bowl with the left over marinade. So so so good.

Red Quinoa and Avocado Salad

I don't know why, but I thought this was going to be a hot dish. Obviously I didn't read the instructions all the way through. I thought the flavor was very good - the lime and cumin. I didn't have red quinoa, so I used regular quinoa, and I could have used more of it. Also, the avocado I had wasn't quite ripe. All in all, I don't think there's anything wrong with the recipe, I think my dissatisfaction had to do with me wanting a hot dish and using an unripe avocado. I'll try it out again...

Tofu Parmigiana

So so good! I followed another users comments in prepping & cooking the tofu: I froze the slices first, then coated in flour, dipped in egg and then covered in the bread crumb mixture of crumbs, parmesan and oregano. Then baked it at 350 for 15 minutes on each side. Then I used a loaf pan, layering sauce, tofu, cheese 3 times. I doubled up the bread crumb mixture and the sauce. It was so so so good!

Vintage Lemonade

It was very good; however there was a slight bitterness along with the sweet lemony taste. I'm not sure if that's from the lemons I used, or what...or maybe that's just how it's suppose to taste? It was fun to watch the sugar turn to goop in the lemon rinds. :)

Slow Cooker Cranberry Sauce

It was perfect! Though I did not need to cook it any longer than the 3 hours covered. Once I took the lid off, to begin the 45 minutes without the lid, I realized it was already the consistency it needed to be. But it was great! Didn't change a thing other than the cooking time. ;)

Easy OREO Truffles

These were such a hit!!! I used the holiday oreos with red filling thinking it would be more festive, not knowing that once everything is mixed up, you can't see the color of the filling...it's just all dark brown goodness. So so so so SO GOOD! I followed someone elses advice and froze the balls prior to dipping, as well as using two spoons instead of toothpicks. Also, I used ghiradeli chocolate! Mmmmmmm...

All-Around Good Smoothie

Excellent! I've been making these every morning for the past few weeks. Mmm mmm good! Though I do not put any honey in - no need. Also, I use a tsp of flax seed oil instead of the seeds themselves. Also, I like to mix it up by putting flavored yogurt; so far, I've tried strawberry, blueberry, maple and vanilla.

Cottage Cheese Roast

Oh my goodness! This is the most amazingly delicious dish I've had in a very very long time. I just tried the recipe for the first time a month ago, and I've made it 3 times since! Yummy yummy yummy! And I like to call it a Nut Loaf instead of Cttage Cheese Roast. :)

Five Minute Ice Cream

Quick and Easy Vegetable Soup

This was very tasty! I used Vegetable Broth instead of Chicken Broth, and I added an additional cup instead of a cup of water. I also added 1 chopped medium onion, and used Lawrey's Seasoning Salt instead of Creole seasoning. I will definitely make this again.

Make Ahead Lunch Wraps

These are fantastic! I substitute spinach tortillas for the flour tortillas, quinoa for the rice, and mix up the beans to include black beans and kidney. Super great for making ahead and freezing. I'd recommend wrapping them first in wax paper and then the foil. When you're ready to eat, just pull off the foil and microwave it with the wax paper. This way the tortilla won't dry out and get hard.
