In 2004 Joe was tested for food allergies and the list of reactions was quite long. In general, cooking became a challenge and we read a lot of labels to figure out what would work. Confirmed allergies:
• Dairy - cheese, butter, cream, milk
• Molds – wine (fermented), vinegar (fermented), soy sauce (fermented), yeast, enriched anything (flour, rice, cereal), mushrooms, olives, raisins, malt, molasses, brown sugar, malted barley (malted anything), pepper (ground, white, black)
• Peanuts and peanut oil (any peanut product)
• Shellfish, also in any product with added calcium or calcium fortified products
• Cottonseed oil
