Amazing Muffin Cups

These truly were amazing. The potatoes were crispy and buttery, and the layers worked really well together. The top was fluffy and the hash browns sweet, with a layer of sausage-goodness in-between. My family is craving this recipe so I'll be making it again and again!

Cannoli Dip

I can't eat traditional cannolis because I stick to a gluten-free diet. This recipe is the answer to my prayers! Rich and delicious, this recipe will be added to my list of favorites. And it's so easy to make. This one's a winner.

Chocolate Covered Matzo

This recipe was a total surprise for me. I have made chocolate covered matzoh for years, but not with this type of recipe. Mine was plain old matzoh, coated with chocolate. This is more of a toffee/chocolate covered matzoh and it was well worth it to give it a try. It is delicious and easy to make.

Chocolate-Filled Crescents

My daughter asked me to make this recipe TWICE! They didn't last long in my house. I changed up the recipe a little bit by adding some chopped pecans (pressed into the dough) and topped it with a small sprinkle of sea salt. Delicious!

Easy Southern Fried Green Tomatoes

Bacon, Egg and Cheese Sandwiches

This recipe was a huge hit with my family! Eggs, cheese, and (turkey) bacon are staples in my household. Wrap them all up in a delicious Pillsbury Crescent Roll and voila! Delicious breakfast (or lunch or dinner).

Crescent Dogs

My daughter shocked me by stating, "I've never had these before!" I grew up on "pigs in a blanket" but I guess I've never made them for her! She loved them. And they couldn't be easier to make. I doubt we'll ever have "regular" hot dogs ever again.

Salted Caramel Sauce

Making this sauce takes some concentration, but in the end, it's worth it! Sweet, thick, salty... It's perfect for an ice cream topping or even drizzled over the whipped cream on top of an iced coffee! The sauce should NOT by any means taste bitter. (If it is, you've cooked it too long.) Keep a close eye on it and make sure you don't let it get too dark. Well worth the effort.

Thanksgiving Leftovers Casserole

OK, so this recipe was a pleasant surprise. I have to be honest and say that I wasn't sure I was going to like it. Sure, I like all of the Thanksgiving food ingredients. But the mixed vegetables, added with the mayo...I was skeptical. But I have to say this casserole is absolutely fabulous! The end result is very pot pie-ish, and that's always a winner with my family. It's the ultimate comfort food, and this puts a wonderful Thanksgiving spin on it!

Matzo Brei

This is very close to how my mom made it. I like mine a little bit more "eggy" so I will do three or four eggs (beaten with a hand mixer) per recipe. I also use butter instead of oil. Delicious!

Easy Weeknight Chicken Pot Pie

Absolutely delicious recipe. I love the fact that I can use the rotisserie chicken leftovers. I made this gluten-free, so I didn't use a prepared regular crust. I ended up using a gluten-free bread stuffing "crust" instead. I also thickened the sauce with Pamela's Gluten-Free Baking and Pancake Mix instead of flour. It was a big hit with my family. I could make this recipe at least once a week.

Awesome Slow Cooker Pot Roast

This was a good, simple pot roast recipe. It is similar to the one I traditionally make. (I tend to steer away from "packaged" flavors and seasoning and lean more toward fresh ingredients, i.e., fresh onion, fresh garlic, etc.) My family really enjoyed it!
