Best Tuna Melt (New Jersey Diner Style)

Reviewed: Jul. 12, 2014
This IS the tuna salad sandwich that I eat at a deli and crave at home. If anything, I have been enlightened to the benefit of red wine vinegar added to a tuna salad recipe. If you like sweet pickle relish in your tuna salad, it will still work here....I've done it! I do believe rye is the very best bread for a traditional tuna melt. But, I have experimented with other cheeses like cheddar and dill havarti with wonderful results. I also have to say that caramelized onions takes this sandwich to a crazy good level!

The Best Thai Coconut Soup

Reviewed: Feb. 22, 2014
I found this recipe to be on the right track for the flavors I was looking for...but those flavors were just not bold enough. I doubled the red curry paste, lime juice, and brown sugar. Extra fresh cilantro too. I really appreciated this recipe because it was very simple and it did get me very close to the Tom Kha Gai at my favorite Thai restaurants. I found dried lemongrass in a jar on the Asian aisle and that has worked very well when I can't find fresh. I have learned though, you cannot replace fresh cilantro and fresh lime juice...ever. Thank you so much for sharing this because e I crave this stuff all the time!

Honey Mustard Dressing II

Reviewed: Jan. 29, 2014
For me, this is the classic steak house honey mustard dressing. I make this recipe exactly as written and then add a dash of cayenne pepper for a tiny kick (which everyone can handle). I always serve this with a spinach salad that consists of baby spinach, thin slices of red onion, chopped hearts of palm, tomato, small handful of alfalfa sprouts (they look pretty sitting on top), roasted sunflower seeds, a sprinkle of shredded cheese (usually mozz), and a few croutons for crunch.

Chicken Potpie

Reviewed: Oct. 5, 2010
I finally did it! I finally made a chicken pie! I followed the recipe exactly and used refrigerated pie crusts. The recipe was easy and the outcome was delicious. I had some leftover pie crust scraps and filling so I made a little pie in a small ramekin. It was cute and extra tasty with a greater ratio of pie crust to filling.... Next time I will make many individual pies instead. I loved that this recipe made an extra pie for freezing.

Avocado Shrimp Ceviche-Estillo Sarita

Reviewed: Aug. 15, 2010
Fantastic - I changed nothing except serving the ceviche with tortilla chips instead of crackers.

Kale and Banana Smoothie

Reviewed: Aug. 14, 2010
Fantastic smoothie! I keep a bag of chopped frozen bananas to use in my smoothies for the chill factor. I also use agave nectar since that is what I usually have on hand. Kale is super nutrient dense!

Butter Bean Burgers

Reviewed: Jul. 20, 2009
Very good. I followed the recipe exactly. I let the burgers hang out in the fridge for about an hour before cooking - and they held together very well. I will make them again without a bun - they are tasty all on their own.

Old Bay® Shrimp Salad

Reviewed: Jun. 12, 2009
This is definitely the taste I was looking for in a shrimp salad. But let me warn you all out there - when making your sauce try it first with 1 teaspoon of lemon juice and taste - I found 2 teaspoons too much. The Old Bay could be cut down by 1/2 teaspoon too. I will make again!

Peanut Butter Haystacks

Reviewed: May 10, 2009
Very simple and suprisingly addictive. Sweet, salty and crunchy. My husband eats the entire batch within a day. Honestly, I can't make it often because it is dangerous to have around....you know what I mean?

Authentic Thousand Island Dressing

Reviewed: May 7, 2009
This dressing is delicious. I am not an egg fan though. If you love eggs in your salad you will flip over this recipe. I now make with out mixing in the eggs and it is perfect for me.

Baby Carrots with Dill Butter

Reviewed: Aug. 11, 2008
Excellent way to prepare carrots. Like others have said - watch the amount of lemon juice. Start off with much less - but it definitely plays an important role in the overall flavor. I used dried dill to taste. Very very yummy - and I usually avoid cooked carrots!

Special Deviled Eggs

Reviewed: Jul. 22, 2008
Well, these eggs were not bad. But, they were not tasty like I had hoped. The horseradish was way too pronounced and I used half the amount the recipe called for. I like horseradish but do not think it pairs well with deviled eggs. I will stick with the traditional version - but I'm glad I tried something different.

California Salad Bowl

Reviewed: Jun. 17, 2008
This was not ok the first time I made it because I did not use the chips. It needs the crunch - the salad was a success the second time!

Manicotti Alla Romana

Reviewed: Jun. 17, 2008
Outstanding - you must try this one! I used sausage instead of the beef - but other than that followed the directions exactly. The white sauce was so delicious I would have it ate it like soup if I didn't have any self control! I don't know why everyone complains about it taking so long - that's the fun part to me!

Mediterranean Chicken with Eggplant

Reviewed: Feb. 8, 2008
Very good. I did not have tomato paste so I used about a cup or so of jarred marinara and eliminated the water. I also added a handful of sliced marinated green olives - worked very well. I love eggplant - delicious dish.

LuvAnn's Guacamole

Too much salt - just add to taste. I go light on the onion and tomato too because I like the avocado to shine. This is the very best basic guacomole recipe.

Flatlander Chili

This is the best chili we have ever had. Follow the recipe exactly. I have also used canned crushed tomatoes and canned chopped tomatoes - also terrific (more substantial). You must try this chili!

It's Chili by George!!

Reviewed: Mar. 1, 2007
After serving this to a group of people I received several comments like "this is the best chili I have ever had!". I replaced the tomato juice and sauce with a combination of canned crushed tomatoes and diced tomatoes - otherwise I followed the recipe. Great tip - try the "Fire Roasted" style of canned tomatoes (Muir Glen is the only brand I have ever seen)- the flavor rocks!
