Barbeque Smoked Sausage Pizza

This was really tasty. I made only one pizza, it was for my hubby and myself. I had one piece! It is sooo filling. I think you would have to feed an army if you were planning on making both, like the recipe calls for. My hubby, who usually can polish off 3/4 of a pizza ate two pieces. So good, but super filling. It was a nice change from regular pizza. We have a pizza stone for our grill, so we grilled it instead of baking it. Other than that I stuck to the recipe.

Almond-Topped Chicken

It was very tasty! I used grapeseed oil instead of butter. I also added a little fresh black pepper and garlic powder to the chicken. Just sprinkled both on. Both my hubby and I loved it.

Boo's Kiwi and Mango Salad

This was ok. I think I would make a few alterations to it. I would add more fruits and a little less pepper. Some green apple and clementines (or any kind of orange) My hubby and I agreed that would have been more tasty!

Pesto Pasta with Chicken

Very excellent! I used a reduced fat pesto sauce and whole grain penne pasta. Both my hubby and myself loved it! Fresh tasting and a great alternative to the usual red or alfredo-ish sauces!

Slow Cooker Italian Beef

My family absolutely loved this recipe!!!! We are from Chicago and Italian Beef is serious business for us! My hubby is very very picky about his beef and this was a major hit! I used a low sodium deli roast beef and low sodium beef broth. It was perfect. It was in the slow cooker longer than an hour. I think about 1 1/2 hours. I also picked up some hot giardiniera to put on our sandwiches. It was yum yum yum!!! It was much less greasy than ordering it from somewhere. This is going to be a staple in our house from now on. So easy to make. It took me less time to put in the cooker than it would have to wait for our sandwiches to be ordered and made!

Absolutely Ultimate Potato Soup

I will give it 4 stars because my hubby gobbled it up greedily, had seconds, and took some for lunch today. I didnt care for it though :-) Only because I dont really like bacon and to me it felt like I was eating bacon grease (I have NEVER cooked with bacon grease before!!!) I mean it tasted good for the most part, but I am somewhat of a health nut, so it was hard for me to eat this. OTHER THAN MY PHOBIA of bacon, it was a hit here. My hubby was so happy to have something not totally focused on healthy healthy healthy! He loved it. He thought it was perfect and delicious and is hoping I feel nice again and make it another time down the road! So if you like bacon, this just might be the soup for you!

Hummus III

This was pretty good. I added an extra small clove of garlic because I felt it needed a little more "something." I may try some red pepper next time. Also the 16 servings really make a lot. I think next time I may cut it in half, unless I am having a big party! There were 4 of us snacking and there was a lot leftover. But overall a tasty treat that I will save and make again!

Arrabbiata Sauce

:-) It is great! I decided to double the amount of red pepper because we LOVE spicy food. haha That was a bit too spicy for me. My hubby thought it was great that way. Next time I will do 1 1/2 teaspoons. I think it will be a nice in between. OH I also put it in a food processor when it was done cooking to make it smooth. We prefer smooth sauces. It worked out wonderfully! I definitely recommend this recipe. I cannot wait to make it again. It is going to be a common dinner night in our house!
