So today I am 38 weeks preggo. AHH my baby is due any day now :-) I cannot wait. Monday's are my shopping/menu planning day. I always sit down in the morning, plan my weekly menu, then head to the store! The past few weeks I have had a hard time planning for meals. I just dont find myself having MORE

About this Cook
I have been married to my hubby for 2 1/2 years. Our first son is due in a few short weeks! We have three kitties whom we spoil. I love to be crafty and I love cooking!
My favorite things to cook
I like to find tasty healthier recipes, which can be quite the challenge. My poor husband is the guinea pig for these. But I try! I also love bread! Especially whole grain breads and other carbs.

Baking cookies around Christmas time with my mom.
My cooking triumphs
I have amazing chocolate chip cookies. I do not share the recipe though. It is my ONE cooking secret! My hubby, father in law, and my grandpa are all some of the men in my life who have requested these secret cookies!
My cooking tragedies
My portobello mushroom dish. My hubby brings it up. It was just terrible tasting. I can admit that. There are other dishes here and there, but that will be the one dish when we are 90 that he says, "remember the mushrooms?" :-)

Almond-Topped Chicken
It was very tasty! I used grapeseed oil instead of butter. I also added a little fresh black pepper and garlic powder to the chicken. Just sprinkled both on. Both my hubby and I loved it.

Boo's Kiwi and Mango Salad
This was ok. I think I would make a few alterations to it. I would add more fruits and a little less pepper. Some green apple and clementines (or any kind of orange) My hubby and I agreed that would have been more tasty!

Pesto Pasta with Chicken
Very excellent! I used a reduced fat pesto sauce and whole grain penne pasta. Both my hubby and myself loved it! Fresh tasting and a great alternative to the usual red or alfredo-ish sauces!
