Italian Style Meatloaf I

I followed some of the other reviews and only used one egg. I also added 3 - 4 T of dried chopped onions and used Italian style diced tomatoes. I cooked for 1 hr 15 minutes at 375. My family liked it and said it was a 'keeper'.

Baby BLT

I found it was better to NOT cut the bottoms off. I managed to scoop out the tomatoes with a combination of sharp knife, small measuring spoon and my fingers. I took others advice and salted and drained on paper towels, used a package of the pre-cooked bacon, 1/4 cup sour cream, 1/4 cup low-fat cream cheese and 2T. mayo. And the chopped green onions, of course. I added some garlic powder to the mix and left out the parsley. I used a disposable pastry bag without a decorating tip to fill; that was the easiest part. I didn't have enough tomatoes to fill my serving dish so I decorated the perimeter with fresh basil to help the tomatoes stand up. I took to a thanksgiving party and everyone loved them.

Stuffed Pepper Loaf

I only used one egg and added about 3 or 4 T of dried chopped onion. It turned out well but the loaf pan will be very full and you might want to put a small pan under it to catch any drips.

Maria's Broccoli Rabe

This was the first time I've cooked or eaten broccoli rabe. My children didn't like it because it was 'greens' but I thought it was great. Something new to add to my diet. Always looking for new things, especially if they are healthy.
