This was a very good recipe. Very elegant. I followed the instructions exactly the first time and there wasn't enough sauce for us (we are sauce people). The next time I doubled the vinegar and broth. The flour didn't add much to the coloring so it is a take or leave it step. I have served it with pasta and with rice. It is good with either. I did cook the rice with chicken stock and it was a nice compliment to the dish. I didn't rinse the mushrooms as I have always been told not to put mushrooms underwater as they will soak in the water. If they need it, I wipe them off with a damp paper towel.
