Chef John's Flour Tortillas

This was my first time trying to make homemade flour tortillas. This was a very easy recipe and I did enjoy eating them hot with butter. The tortillas tasted slightly of uncooked flour. The only thing I will do different next time is to cook them at a slightly lower temperature so they cook a little longer. Maybe that will take care of the floury taste. Other than that I can certainly live with them just as they are.

Chicken Breasts with Balsamic Vinegar and Garlic

This was a very good recipe. Very elegant. I followed the instructions exactly the first time and there wasn't enough sauce for us (we are sauce people). The next time I doubled the vinegar and broth. The flour didn't add much to the coloring so it is a take or leave it step. I have served it with pasta and with rice. It is good with either. I did cook the rice with chicken stock and it was a nice compliment to the dish. I didn't rinse the mushrooms as I have always been told not to put mushrooms underwater as they will soak in the water. If they need it, I wipe them off with a damp paper towel.

Chess Pie III

This was absolutely wonderful! Followed instructions exactly (including the 35 min. bake time) and the pie came out perfect. Very rich and sweet. This will become a regular on my menu!

Creme Brulee II

This is an easy and wonderfully tasty recipe. I used 4 egg yolks and increased the baking time. I didn't realize it would take 4-6 hours to set so I let it cool enough to put it in the freezer and let it cool of in there for about 45 mins. It was cooled and ready to put the sugar on. I will definitely make this one again.
