Muffuletta Pinwheels

I made these for my daughter's birthday party and used only organics/no nitrates/raw ingredients directly exchanged for the listed. Oh, goodness! I'm so glad I doubled the batch because they were inhaled by kids and adults alike! Definitely going in the "keep" file!

Quinoa and Black Beans

This is a great basic recipe for the newly-exploring 'granola' eater. Having converted away from processed foods and only eating "real" food for many years, I added on to this one. I added zucchini and Kale to the quinoa mixture prior to covering and simmering. I also subbed the corn for edamame. I also added 1/2 a jar of roasted (in garlic and olive oil) red peppers I had on hand. Because I added more "stuff", I doubled the spices. This is a great one, especially for a filling lunch after a hard yoga class.

Cone Cupcakes

My 5 yr old daughter wanted a "Glee" (TV show) themed Birthday party and I searched high and low for an acceptable cake. I ended up using these, and staged them with Chocolate icing as "microphones". HUGE HIT!!!

Original Chex® Party Mix

Man, was I ever leery about microwaving this! I made 2 batches, doubling the spices for each, and did the first round the old fashioned way in the oven at 250 for 1 hour, stirring every 15 minutes. The 2nd batch, I tried the microwave and IT WORKS! Just don't go over 5 minutes as it can over-toast (I spaced and let it go about 20 seconds too long). It didn't ruin it completely, it was just a little over-toasted in one area. I'll be doing it this way from now on.

Day Before Mashed Potatoes

I use a version similar to this that I've used for 15 years, originally from my step-mother's Junior League cookbook. I make it well in advance (several days) and freeze it. Then put in the fridge overnight on Wed. Cook as directed on Thursday morning. Yukon Gold potatoes are the best, but Russets work too. I add a pinch of Baking Soda to make them fluff up nicely. And, I use the entire 8oz package of low-fat cream cheese. Sprinkle a little seasoned salt on the top. Super easy. Always a hit!

BBQ Pork for Sandwiches

This is one of my family's favorite dishes of all time. All 3 of my picky-eater kids (ranging from 17 to 4yrs) will eat it and go back for seconds. I've used it for countless parties where a large dish was needed and many people have asked where I ordered from! I use the Sweet Baby Ray's Barbecue Sauce and it is delicious! I also use a Pork Loin or Butt as other reviewers said.

Stuffed Peppers with Turkey and Vegetables

About 5 years ago, an acquaintance gave me a recipe similiar to this that was absolutely to die for. Well, 2 moves later, I lost it, and have been trying to recreate it for years. This is ALMOST as good as that old one! First, I steamed the peppers for about 3 minutes instead of baking - they turned out perfect tenderness. I ommitted the spinach and mushrooms, and reserved the juice from the tomatoes. I combined all ingredients (except peppers to be stuffed), and added tomato juice (with added water, enough to make a full 1 cup) and brought to a boil. Then, I added 1 cup Couscous and removed from heat for 5 minutes. After filling, I topped with a pinch of Mozzarella cheese before baking. Turned out GREAT!!
