I'm a mom of 2, living in a suburb of Dallas, Tx. I never really learned much cooking from my mother, so taught myself beginning in college. I take great pride in planning out the week's meals for my family and cooking is a huge part of my life. I love entertaining and trying new things at others' suggestion. Love this site!

I like to cook most things, and prefer to stay away from fatty and over-sweet things. Healthy eating is a big deal around here.

My cooking tragedies
In my early cooking years, I was plagued by pork tenderloin. I have had so many tragedies cooking them! I've burned them in the oven and crock pot and undercooked them just as often. Thanks to this site, I have finally mastered it and my family thanks you!

Muffuletta Pinwheels
I made these for my daughter's birthday party and used only organics/no nitrates/raw ingredients directly exchanged for the listed. Oh, goodness! I'm so glad I doubled the batch because they were inhaled by kids and adults alike! Definitely going in the "keep" file!

Quinoa and Black Beans
This is a great basic recipe for the newly-exploring 'granola' eater. Having converted away from processed foods and only eating "real" food for many years, I added on to this one. I added zucchini and Kale to the quinoa mixture prior to covering and simmering. I also subbed the corn for edamame. I also added 1/2 a jar of roasted (in garlic and olive oil) red peppers I had on hand. Because I added more "stuff", I doubled the spices. This is a great one, especially for a filling lunch after a hard yoga class.

Cone Cupcakes
My 5 yr old daughter wanted a "Glee" (TV show) themed Birthday party and I searched high and low for an acceptable cake. I ended up using these, and staged them with Chocolate icing as "microphones". HUGE HIT!!!
