Crunchy Oven Fried Tilapia

This was pretty good, hubby scarfed it up like it was his last meal. I thought the coating was a bit dry and tasteless myself. Next time I make this, I'll check the other reviews more carefully for suggestions on changes but it gets 4 stars as is because hubby loved it.

Zesty Tuna Salad

Very nice change from the usual tuna salad I make. I used chopped shallot instead of plain cooking onion but otherwise stuck to the recipe as written. Really liked the low quantity of mayonnaise and both hubby and I enjoyed the dijon tang. Will probably use this as my go-to tuna salad for sandwiches. Thanks for posting!

Hawaiian Pork Tenderloin

This was SO GOOD! I couldn't find any pineapple preserves so followed another reviewers suggestion and used apricot preserves instead. I can't see how it could have been any better. Served with rice pilaf, this was an incredible dinner Saturday night. With it being such a low fat meal, this is going to be repeated often at my house. Thanks for posting this.

Pork Chops with Garden Rice

This was SO good and SO easy! Added to my regular rotation. I used boneless pork chops but next time will use bone in. They were nice and moist when we first started eating but dried out quickly so I think bone in pork chops will be better next time. But otherwise, this was a delicious meal that contains everything you need for dinner. I added some biscuits is all. Thank you for posting this really great dinner recipe.

Classic Rice Pilaf

Made this tonight with baked salmon filets and it was excellent! Hubby and I are not overly fond of rice but eat it as a healthy alternative. But we both really liked it cooked this way so I'll be keeping this recipe as a regular repeater. Didn't have saffron but otherwise didn't change a thing and it made a perfect rice side dish.

Shrimp and Crab Enchiladas

These were excellent but the enchilada sauce I bought was way too hot for me to eat. Hubby managed but I just couldn't so I had to brush it off. But the enchilada itself filled with seafood was delicious and I will be repeating these often regardless of the too-hot sauce.

Hot and Tangy Broccoli Beef

Made exactly as written except used beef broth instead of water for sauce. Next time will double the sauce as hubby said he'd like it a bit juicier. Otherwise this was really good and we thoroughly enjoyed this served over steamed fried noodles last night. Thanks for posting!

Becki's Oven Barbecue Chicken

These were just okay. We didn't feel there was anything really special about them but hubby ate his usual heaping share and cleaned up the leftovers the next day. The recipe is easy enough to prepare just make sure you use foil or spray generously as the clean up will be a nightmare otherwise.

Delicious Black Bean Burritos

An extremely boring and tasteless dinner tonight. Made these exactly as written and the only feedback I got was "tastes like a bean sandwich". And then everything got thrown out and we ate turtle cream pie for dinner. Won't be repeating this one but I suppose if you like bean sandwiches, the positive things I can say about this was it was very easy to put together and quite inexpensive too.

Easy and Elegant Pork Tenderloin

Really really good! Two pieces of tenderloin lasted us two meals and reheating the second piece the following night gave us a piece of pork that was equally as tasty the 2nd night as it was the first night. I just microwaved it real fast to heat it back up. This has become my favorite way to prepare tenderloin and I'll be using this recipe often. There was no way the crumb mixture was sticking to the meat enough to leave a 1/4 inch coating but it didn't really matter. It still tasted wonderful. Thanks for posting this.

Easy Vegetable Pot Pie

I made this pie exactly as written but the thyme overpowered everything else and the filling was too runny. The pastry was the only good thing about this pie but that's to pilsbury's credit. Sorry I can't give a better review but I've made several other vegetable pot pies that were way better albeit more work. Will not repeat this one.

Great recipe! A bit labor intensive but totally worth the effort. Used legs with backs attached and an entire 14 oz can of tomato sauce. Served with spaghetti it made a really great dinner.

Red Snapper Livornese

Forgot to buy black olives so used some slice manzanilla olives I had on hand. Otherwise used 2 lbs of snapper filet and did not drain the tomatoes before using. Served over rice and steamed broccoli on the side, hubby said it was delicious. I am not a fish eater but I didn't mind this at all so putting it on my regular Friday night fish rotation. Definitely recommend using tomatoes with juice because that was the best part served over rice in my opinion.

Cream Cheese Bars II

This was really good although a bit rich. Mine didn't come out nearly as attractive as the picture featured on the recipe page either. Not sure how the crescent dough was flattened out and made to look so neat and tidy. Maybe some direction in the recipe itself might have helped. Nevertheless they tasted great but I probably won't make them a lot since they are so extremely fattening.

Hearty Vegetable Lasagna

This is an incredible veggie lasagna. I also added chopped zucchini, shredded carrot and chopped broccoli to the sauce mix and used chopped spinach in the cheese mixture. You just don't miss the meat with this dish. We had it two nights in a row so it reheats in the microwave very well and then I also had for my lunch on day 3. Delicious lasagne, I highly recommend this recipe for your Meatless Mondays.
