Down here in Central Coast Florida since late Aug. 2012. I still cook and bake and its so good to be around family again!
My favorite things to cook
There is just one of me but I do cook dinner almost every night. I love easy dishes on the nights I really don't feel like cooking. Grandmommy Capps lived in Rocky Mount, NC....Sundays were a holiday! Dinner was at 2pm. Leftovers were snacks later(dark thirty)....she was a great biscuit and piemaker. Being the oldest of 23 grandchildren, I was the BEST dishwasher! Hand wash everything in a washpan! I've never heard of it??? You need one to play as your wash sink,and then you rinse in the kitchen sink.....It was air dry either....someone had to dry ALL the dishes! I love my Sis for that!
My favorite family cooking traditions
We have ham, blackeyed peas, collard greens, and corn muffins on New Year's Day for good luck! Peanut blossums are my favorite cookie for Christmas!

"Banana Crumb Muffins" were delicious & gorgeous,looked store-bought!
My cooking tragedies
I have left the neck(in the bag) in the turkey in the past 5 years! I should know better! Always rememember to check BOTH ends of the turkey before you cook it! I'm Blonde...Sheesh!!

Saffron Scented Cauliflower Pasta
Easy and a good use for cauliflower! To add depth, add garlic,dried red peppers, chives and/or parmesan cheese for a main dish. Serve with salad and a hearty bread...perfect for vegetarians! I bought Mexican saffron from Trader Joe's for around $ it is POSSIBLE to find saffron fairly cheap without killing the budget. I really like this one with the add-ins....KEEPER!

Hash Brown Waffles
I actually used some thawed tater tots to speed things up! Added real bacon bits and some sharp cheese also....It was excellent! Make sure you oil or spray the waffle iron liberally when adding cheese. Do not open for about 8 minutes...came out crispy and delicious!
