About this Cook
As some know(thank you for your support)my Hubby passed away in April 2011. I sold the home in KY the day before I moved down to Florida, I was such a lucky duck and so thankful. Down here in Central Coast Florida since late Aug. 2012. I still cook and bake and its so good to be around family again!
My favorite things to cook
There is just one of me but I do cook dinner almost every night. I love easy dishes on the nights I really don't feel like cooking. Grandmommy Capps lived in Rocky Mount, NC....Sundays were a holiday! Dinner was at 2pm. Leftovers were snacks later(dark thirty)....she was a great biscuit and piemaker. Being the oldest of 23 grandchildren, I was the BEST dishwasher! Hand wash everything in a washpan! I've never heard of it??? You need one to play as your wash sink,and then you rinse in the kitchen sink.....It was air dry either....someone had to dry ALL the dishes! I love my Sis for that!
My favorite family cooking traditions
We have ham, blackeyed peas, collard greens, and corn muffins on New Year's Day for good luck! Peanut blossums are my favorite cookie for Christmas!

"Banana Crumb Muffins" were delicious & gorgeous,looked store-bought!
My cooking tragedies
I have left the neck(in the bag) in the turkey in the past 5 years! I should know better! Always rememember to check BOTH ends of the turkey before you cook it! I'm Blonde...Sheesh!!

Sweet and Spicy Salmon with Grapefruit Salsa
Loved this recipe! Since I was cooking only for me, I decided to just do this in a saute pan on the stove...only took 5 minutes! I just put about a tablespoon of Mazola oil in the hot pan, placed salmon skin side down in pan, for about 2 minutes, turned the fish and cooked for about another 2 minutes! Came out perfect! This rub was delicious! Thank you Mazola for this great recipe.

Upside Down Turkey
Easy and came out so juicy! I did season the turkey, buttered the skin and left foil on it until the last hour! Delicious!
