Asian Glazed Chicken Thighs

Cooking time was too long and the chicken came out a little dry... The flavor was good, but I think it would be a lot better with a shorter time. Also key is to thicken the sauce enough to get some good stick.. mine stayed thinner than I liked (shoulda used the corn starch).

Pork Tenderloin Diablo

Loved it. Didn't have any heavy cream so I subbed some non fat sour cream in place. Worked perfectly. I also added some stir fried mushrooms to the sauce which I think was a delicious compliment.

Delicious. Skipped the tortila chips (not needed) used 5oz of mixed cheddar cheese and lowfat mexican cheese blend. Also added a bunch of garlic powder.

Oven-Fried Pork Chops

Good, I like the little crunch on the outside. When flipping though I'd spray a touch of cooking spray on the outside to help it crisp up a litlte bit. Also w/ thick chops you'll need about 25min instead of 20. Of course remember to season your crumb coating and the chops prior.

Mexican Chicken I

I swapped one of the cans of beans for a can of sweet corn to break it up a little bit. I think 1hr is plenty to bake and it can probably be more like 40ish min, but I haven't tried that yet. I also like to season the chicken before topping it w/ a mixture of garlic powder and chilli powder.

Slow Cooker Beef Vegetable Soup

Needs a bit more seasoning, other than that I didn't change much. I went with fresh baby carrots and fresh sweet potatoes instead of canned. Once I tasted I added a good chunk of garlic powder and a little more salt and pepper. I would definitely make it this way again.

Roasted sweet potatoes with apples and maple-sage butter

Great, but a bit more trouble than it might be worth. I would use more sage and at least double the syrup and ensure you toss the syrup lemon juice in the bowl, not the still hot pan or you'll melt off most of the flavor. It's a bit tough to time these to come out at the same time as 15min isn't enough time on the Sweet Potatoes.

Pan Seared Tenderloin with Mushroom-Dill Sauce

I was worried my meat was going to be overcooked as the outside was gray then dark during cooking, but it came out about perfect. The sauce was made w/ 5oz fresh shitake and some re-hydrated chanterelles. The sauce was flat out amazing, beef delicious. I served w/ some mini eggplant parm and an IIPA.
