Broccoli Pasta

Super easy! I used rotini instead of linguini (because that's what I had), and cooked the broccoli with it as another reviewer suggested. I didn't have any parsley so I used a bit of basil and oregano instead. I was tempted to add butter (as I always am), but was able to refrain. I didn't miss it, and the kids loved it!

Mango Chutney

I needed mango chutney to complete the "Potatoes Madras" recipe from this site, and had just enough ingredients to pull together a small batch of this. Perfect! Funny thing is I learned after 16 years of marriage my Indian food loving husband hates chutney, until now. He said its the only chutney he's every liked, and couldn't get enough of it. Besides altering the cooking time for a small batch, my only other alterations were coconut palm sugar in place of brown sugar and canned chopped ginger instead of fresh. I will definitely be canning a large batch of this when mangoes go on sale at the market!

Potatoes Madras

Vegan friends were visiting in two hours and the grocery store is 30 minutes one way from my meat and dairy lovers' kitchen, and this was the perfect recipe. The only ingredients I didn't have on hand were the canned tomatoes and the mango chutney. I improvised on the tomatoes by dicing a large fresh tomato from my garden and a can of tomato sauce. I happened to have the fixings to make a small batch of "Mango Chutney" from the recipe on this site (which was perfect in and on as a condiment for this dish). I doubled the recipe to serve 8 and still have lunch for tomorrow, and everybody loved it!! I feel like a winner after what seemed like a hopeless situation only a few hours ago! Thank you!!

Maple Salmon

The whole family loved it! I didn't have time to marinate it so I cooked the salmon wrapped in foil with the sauce, as a previous review suggested. I thickened the juices after cooking, and it worked great. This will definitely be added to our fish night repertoire.

Light Oat Bread

Excellent! I subbed 1 c of the all-purp with 1 c whole wheat, and it still turned out great. I just bought my machine 2nd hand for $10, but it didn't have a manual. I tried a few other recipes with little luck. This turned out a perfect all purpose bread. I'm taping it to my machine for everyday use.

Easy Vegetable Soup III

I just made this tonight as a quick and healthier alternative to canned soup for my kids. I did embellish it some, by sauting some onion and garlic in butter and then adding the ingredients and then topped it off with some salt and pepper. The conclusion" 3 out of 4 of my kids ate their entire serving without complaint, 2 went back for seconds. By the way, the one who wasn't impressed, generally refuses any food that is not white or pure sugar.

Lentil Soup

My family loves this recipe. I usually make big batches w/out the wine and can it in quarts for quick dinners. I add a 1/4 cup of wine when I reheat it. For some reason, the flavor is just better when the wine is added later.

Golden Knots

I made this for Thanksgving, and it turned out perfectly. Everyone loved them. They were relatively easy to make, too. The only down I could say is they are much better fresh than as leftovers, but nonetheless we ate them and enjoyed them.

Good job! I made this one with my kids today and we all loved it. A few alterations turned out to make a delicious and healthy (relatively speaking) cookie. I doubled the recipe (I have 4 kids and a vacuum for a husband). I substituted half whole wheat flour with the all purp, and reduced the butter to 1c. I, also reduced the brown sugar by 1/2, and they were still pretty sweet. Next time I'll probably reduce the white sugar, too. Oh, it really helped to chill this dough before baking, too! I definitly recommend this one.

Sopapillas

My kids loved these, although they would probably eat their vegetables if I coated them in enough cinnamon sugar. My Mexican MIL got a good laugh out of them, however. Maybe I added too much water or my oil was too hot, but the texture was not very appealing. I will probably try them again before I swallow my pride and get her recipe.

Corn Tortillas

These are great! I've been making corn tortillas for years, but never had a recipe. Often they would end up too dry or too soggy. This recipe has the perfect proportions. We go one step further and cut each tortilla into wedges and fry for chips!

Banana Wheat Bread

I would give it five stars purely for the nutrional improvement on traditionally banana bread. The only negative I have for this recipe is it is a little dry. My husband thought is was good after he poured honey all over it(he said'"it could use more sugar"). My preschoolers ate it with no complaints or compliments. I did add an extra banana, because I had one. Next time I might try to help with the dryness and nutritional value by replacing the oil with 1/2 cup of applesauce.

Easy Mexican Rice

This is a super easy and tasty burrito stuffer. As previously suggested I cooked the rice with the tomato sauce and taco seasoning. I, also, added about a cup of frozen corn, a small can of chopped black olives and I used a large fresh tomato instead of the can of diced tomatoes.

Fried Tempeh in Batter

My two year old ate most of these before I could finish making dinner. I, too, marinated them in about 1T of liquid aminos, and the garlic called for in the recipe. I used 1/4c less water than what was called for and it coated well. Anything my tot will eat we will make again and again.

Mall Pretzels

This recipe is great! The whole family loved them. We didn't use parchment, just oiled cookie sheets. We salted them right after putting them in the baking soda/water solution, and left off the butter. The rolling wasn't as tough for us as other people noted. The kids had fun making "worms" rolling them between the palms of their hands. The kids worked them a lot and they stilled turned out great.

Pasta/Pizza Sauce

I followed the recipe and it tasted too much like tomato paste. I added an extra 1/4 c of water to knock off the overly acidic taste, and a teaspoon of Italian Seasoning for some extra flavor. We had it on pasta. The kids ate it and hubby said "It's alright." I'll keep looking.

Butter Bean Burgers

This recipe was very tasty with a few modifications. As previously suggested, I used bread crumbs instead of crackers. I had to omit the jalapenos, so my tots could eat them. I, also, added veggie worcester as suggested in a previous review. I fried in a nonstick pan without as much oil, too. The whole family enjoyed them.
