Fresh Asparagus Risotto

This was delicious! I made it veggie-friendly by using vegetable broth. I also left out the white wine and just used a little extra vegetable broth. Also subsituted the heavy cream with milk and it was still PLENTY rich and delicious. I didn't have white pepper - so just used black. A lovely way to use all that fresh asparagus!

Easy Strata and Variations

I made this for a big group on a weekend get away and it was a hit! I added asparagus, plum tomatoes (seeded) and field roast vegetarian Applewood 'sausage' and used sharp chedder cheese. Nobody even new the 'sausage' was vegetarian! Served with a fresh fruit salad and sweet bread and it was gobbled up by all!

Mediterranean Pasta with Greens

This was wonderful! I made it with whole wheat spiral pasta and added a 1/4 cup of feta which was a great addition. I also used dehydrated sun-dried tomatoe rather than oil packed. I soaked the dried tomatoes in warm water with a few drops of oil for about a 1/2 hour. Worked great. This recipe will definitely be coming out for company!

Squash Dip

If you like goat cheese and butternut squash, you'll love this dip! I served with sliced baguette and substituted roasted pine nuts for the walnuts. Also added a little bit of salt. For a more mild flavor, you could substitute cream cheese for 1/2 of the goat cheese. Very beautiful appetizer. Lots of great comments!

Irish Pumpkin Potage

This was lovely! I loved the spiciness of the cayenne with the pumpkin and nutmeg. I did make this recipe vegan by substituting vegetable stock for chicken broth and soy milk for the milk. I found I also only had to use 2 cups soy milk instead of the 4 1/2 cups of milk the recipe called for. I followed another reviewers suggestion and pre-cooked the pumpkin. Worked like a charm. I will definitely make this again!

Sour Cherry Pie

DELICIOUS cherry pie! I used 5 cups of frozen sour cherries which tasted so much fresher than canned! I also cooked the filling on the stove top and let it cool prior to filling the pie to ensure the filling set up nicely.

Favorite Old Fashioned Gingerbread

Like the other reviewers I doubled the spices. I also baked in a bundt pan - baked for 45 minutes rather than 1 hour. Perfectly done. After the cake cooled, I dusted with powdered sugar. Beautiful and tasty!

Pumpkin Maple Pie Supreme

This is a delicious pie! Know that it is definitely a lighter and more custardy pumpkin pie than you might expect. As written it is far too sweet for our taste, but with the brown sugar cut to 1/2 cup it is perfect! Also, a note for those using fresh eggs. I was using eggs straight from our chickens and no matter how much I beat the eggs, egg pieces were still rising to the top of the pie during baking. I finally figured it out and got rid of that problem by straining the eggs through a mesh sieve before beating them into the mixture. Problem solved! The whites of fresh eggs are just so much firmer. Really lovely pie!

Coconut-Curry Lentil Stew Served over Quinoa

This was good - and I will definitely make again - but with some tweaks... We found the tablespoon of salt too much for the quinoa - so would definitely reduce that. Also, the lentils took much longer to cook - and required more liquid. But all in all a great recipe!

Followed the recipe exactly except used about a 1/3 cup of fresh chopped jalepenos. Excellent! The superbowl party goers loved it. Next time I'll try adding even more jalepenos for more zip!

Chocolate Earl Grey Cookies

Absolutely wonderful! Instead of dropping onto the cookie sheet, I rolled the dough into small balls and then pressed slightly. Then topped with decorative sugar. Lovely! Don't cook more than 8 minutes. Perfect, dense, cake-like cookies!

Best Cream Of Broccoli Soup

This was delicious. I added more celery (4 stalks) and two cloves of garlic. I also used soy milk and used an immersion blender to blend the soup. Yum!
