Italian-Style Round Steak

Oh! This was delicious! Everyone loved it. I substituted home canned tomatoes for the tomato sauce and zucchini for the peppers. Served over whole wheat pasta. The meat came out so tender. Highly recommend.

Cinnamon-Topped Rhubarb Muffins

I altered the recipe a bit - using 1/2 cup strawberries and 1-1/2 rhubarb. For the topping, I also just sprinkled on the cinnamon and sugar without the butter. VERY light muffins - but delicious. I filled them to the top - but they spread out on the pan instead of rising up. Would recommend filling only 3/4 full next time. Would also like to try substituting some whole wheat flour.

Sour Cherry Pie

DELICIOUS cherry pie! I used 5 cups of frozen sour cherries which tasted so much fresher than canned! I also cooked the filling on the stove top and let it cool prior to filling the pie to ensure the filling set up nicely.

Pumpkin Maple Pie Supreme

This is a delicious pie! Know that it is definitely a lighter and more custardy pumpkin pie than you might expect. As written it is far too sweet for our taste, but with the brown sugar cut to 1/2 cup it is perfect! Also, a note for those using fresh eggs. I was using eggs straight from our chickens and no matter how much I beat the eggs, egg pieces were still rising to the top of the pie during baking. I finally figured it out and got rid of that problem by straining the eggs through a mesh sieve before beating them into the mixture. Problem solved! The whites of fresh eggs are just so much firmer. Really lovely pie!

Fresh Asparagus Risotto

This was delicious! I made it veggie-friendly by using vegetable broth. I also left out the white wine and just used a little extra vegetable broth. Also subsituted the heavy cream with milk and it was still PLENTY rich and delicious. I didn't have white pepper - so just used black. A lovely way to use all that fresh asparagus!

Coconut-Curry Lentil Stew Served over Quinoa

This was good - and I will definitely make again - but with some tweaks... We found the tablespoon of salt too much for the quinoa - so would definitely reduce that. Also, the lentils took much longer to cook - and required more liquid. But all in all a great recipe!

Artichoke Mashed Potatoes

These were a hit! I used red potatos with the skins on, two cloves of garlic and found I didn't even need to add the butter. Served this with 'Imitation Meatloaf' for a unique twist on a standard pairing.

Followed the recipe exactly except used about a 1/3 cup of fresh chopped jalepenos. Excellent! The superbowl party goers loved it. Next time I'll try adding even more jalepenos for more zip!

Favorite Old Fashioned Gingerbread

Like the other reviewers I doubled the spices. I also baked in a bundt pan - baked for 45 minutes rather than 1 hour. Perfectly done. After the cake cooled, I dusted with powdered sugar. Beautiful and tasty!

Chocolate Earl Grey Cookies

Absolutely wonderful! Instead of dropping onto the cookie sheet, I rolled the dough into small balls and then pressed slightly. Then topped with decorative sugar. Lovely! Don't cook more than 8 minutes. Perfect, dense, cake-like cookies!
