French Toast Casserole

This casserole was DELICIOUS! I did make it in a 11x7 baking dish, followed the recipe except I added the teaspoon of cinnamon to the egg mixture along with about 1/4 teaspoon nutmeg, poured it over the bread and tossed to coat. While that was sitting for 10 mins. I made a simple praline topping of 1/2c. butter, 1/2c. packed brown sugar, 1/2c. chopped pecans, 1 tbsp. light corn syrup, a heaping 1/2 tsp. cinnamon and 1/4 tsp. ground nutmeg-combine all in a small saucepan, bring to a boil and remove from heat, spread evenly over soaked bread. It only took about 35 mins. to bake, but my oven is really hot. Anyway, fantastic base recipe and very delicious results. My 2 year old son loved it. Will be making this again!!

Crescent-Wrapped Brie

I have made this MANY times for various occasions, and everyone always loves it! Depending on my mood, I sometimes add some preserves, like apricot or raspberry or honey and nuts, and sometimes just make it as is. Any way I make it, everyone REALLY enjoys this~YUM! :)

Fried Asparagus with Bacon

YUM! I did use a bit more butter and a little bacon grease. These are really flavorful! I cooked them a little longer b/c we like them on the softer side. I actually forgot to use the parm. on top, but we really didn't miss it (I will use it next time though). This is a keeper...Thanks for sharing. :)

Asian Poached Cod

Well, this may have not been the prettiest looking dish, but it was absolutely DELICIOUS! So simple to make, perfectly tender and FULL of flavor. My little guy loved this so much, he even had seconds! I served this with 'Garlic Broccoli' also from this site and brown rice...a definite keeper~YUM! Thanks for sharing. :)

Sweet Corn Muffins

FANTASTIC! I just took these out of the oven for dinner tonight, and I already ate 2, lol! I did cut down the sugar to 3/4 cup, but that was my only change. These are light and moist and delicious...just what I had hoped for. I actually got 19 muffins out of this and baked them @ 325 for about 15 minutes, which was perfect for my super hot oven. I can't wait to eat them with our chili tonight, as I know they will go great together. This recipe will be made many more times in my house! Thanks for sharing. :)

Flannery's Bacon Avocado Burritos

Delicious! I used shredded potatoes and regular bacon instead of turkey (don't care for it). Instead of putting the sour cream and salsa on the inside, I served it alongside, but if I was making these to 'grab and go', I'd put it inside. These had great layers of flavor. I used the avocado on mine, but I omitted it on hubby's b/c he's not a fan of it. I will def be making these again~YUM! Thanks for sharing. :)

Italian Meatballs and Peppers by PAM®

We all LOVED this! This took absolutely no time to put together, but the finished product tasted like you spent some time making it. I don't care for store bought frozen meatballs, so I used 'Meatball Nirvana' recipe from this site and had them in the freezer ready to go. Using the frozen peppers and onions saved a lot of prep time, which is awesome when you're in a hurry, but still want a nice dinner. Also, using PAM(R) cooking spray made clean up a breeze...a BIG plus in my book! I served this over whole grain penne for a nice, healthy meal, but I know the meatballs and peppers would be wonderful in a sandwich too! I did cook mine on low for 5 hours, but that was my only change. If you have a favorite pasta sauce, you can even use that in place of the diced tomatoes/tomato paste, which is what I plan to try next time. All in all, this was a HUGE hit and a definite keeper~YUM, YUM, YUM!!!!! Thanks for sharing. :)

Banana Praline Muffins

LOVED these and they could not be simplier! I did double the praline, and was so glad I did. the house smelled so good while these were baking that I could hardly wait until they cooled to try one, lol. I used reduced fat Bisquick (R) and light sour cream. Also, while I LOVE pecans, they are just too expensive right now, so I just used walnuts. Perfeclty simple and delicious muffin recipe! I may even try to add a little cinnamon to the batter or topping next time for even better flavor. Thanks for sharing. :)

Best-Ever Cucumber Dill Salad

We LOVED this! I used baby cukes (maybe 4), extra sour cream in place of the yogurt b/c I had none on hand and omitted the celery (personal preference). I can't believe it, but I totally forgot the vinegar in this, lol, but it was wonderful w/o it and stayed more on thick side rather than liquid-y, which we loved. I will def be making this again (the same way I did today)~YUM! Thanks for sharing. :)

Knorr Spinach Dip

This is definitely a staple in our family, too (though I've never made it, myself, my aunt has always been the designated spinach dip maker, lol). I decided to try and make it today, and it was soooo easy to mix up. I did only have 1 box of frozen spinach, so I went with that, but I will def use 2 boxes next time. Great, classic recipe~YUM! Thanks for sharing. :)

California Club Chicken Wraps

Made this for Recipe Group...LOVED IT! I totally forgot to add the tomatoes (oops), but it was still delicious! Also, I used some spinach that needed used up instead of the lettuce and used the submitter's suggestion of making the chipotle ranch sauce instead of the mayo, b/c I thought it would taste better once it was heated. After I put the wrap together, I sprayed it w/ cooking spray and put it in a hot pan to brown/crisp up the tortilla and warm the inside....soooo good! I made this for myself for lunch today, but I will be making them for dinner for the family very soon! Thanks for sharing. :)

Hummus Layer Dip

DELICIOUS! Made as written, except that this was a last minute decision and I only had plain hummus, so I added a little garlic powder to the cream cheese mixture, and I had no kalamata olives on hand, so I just used sliced black olives (yes, I know they are different, but that's what I had). Great blend of flavors! We used BIG Wheat Thins and melba toast for dipping, but next time, I will go te extra milend make pita chips. This was somethng different and we LOVED it! Will be using this recipe often! Thanks for sharing. :)

Chipotle Beef Tostadas

Made this for Recipe Group...If I could give this more than 5 stars, I would! I accidentally picked up chipotle sauce instead of chipotles in adobo sauce (they are in the same can), so I just omitted the water and used 1/2 can of that, which worked out great! The guys could not get enough of these...they kept saying how delicious they were, and hubby even said it is one of his new favorites (this is HUGE, lol). I served these w/ all the topping that usually serve with our tacos. This is a definite keeper, that I know I will be making often~YUM! Thanks for sharing. :)

Zurie's Fresh Fig Compote Over Cream Cheese

Really good! I made the compote the day before and refrigerated it, then when I was ready to use it I poured it over the cream cheese. This would also be great over vanilla ice cream. The figs I had weren't the best, but this recipe made them yummy. I think the brown sugar could even be reduced a bit w/o compromising the flavor. I would make this again! Thanks for sharing. :)

I make this for my 3 year old son all the time! He calls it 'dirty pudding', lol, and loves it. The only thing I do differently is portion it into individual serving cups. This is a fun, easy, and tasty recipe for kids AND adults too! :)
