French Toast Casserole

This casserole was DELICIOUS! I did make it in a 11x7 baking dish, followed the recipe except I added the teaspoon of cinnamon to the egg mixture along with about 1/4 teaspoon nutmeg, poured it over the bread and tossed to coat. While that was sitting for 10 mins. I made a simple praline topping of 1/2c. butter, 1/2c. packed brown sugar, 1/2c. chopped pecans, 1 tbsp. light corn syrup, a heaping 1/2 tsp. cinnamon and 1/4 tsp. ground nutmeg-combine all in a small saucepan, bring to a boil and remove from heat, spread evenly over soaked bread. It only took about 35 mins. to bake, but my oven is really hot. Anyway, fantastic base recipe and very delicious results. My 2 year old son loved it. Will be making this again!!

Greek Salad with Spinach & Feta Chicken Sausage

This was very good! I couldn't find the al fresco brand chicken sausages, so I used the store brand and that worked out fine. I make 'Absolutely Fabulous Greek/House Dressing' from here for the dressing, and that was a perfect match! I would make this again! Thanks for sharing. :)

Chinese Pork Dumplings

WOW, these were AWESOME! I used regular fresh chives (couldn't find Chinese chives), and also, could not find dumpling wrappers anywhere, so I used wonton wrappers that I cut into circles...worked like a charm! While these are a bit time consuming, they are super simple and soooo worth it. The sauce is great, but next time I would cut back on the sesame seeds a bit, as I felt there were too many. I will def be making these again...I'm so excited that I made one of my favorite Chinese foods @ home, and they were better than the restaurant~YUM! Thanks for sharing. :)

Almost Authentic Caesar Salad

This was great! I used 3 tbsp. of butter instead of 2, but that was my only change. I did feel that the dressing ended up a bit salty for me, so I will reduce the salt next time, but other than that, this turned out delicious. LOVED the croutons! I made the dressing a little earlier, and allowed it to sit @ room temp to allow the flavors to blend. I will be making this again! Thanks for sharing. :)

Broccoli Rice Casserole by Minute® Rice

I have been making this recipe for years, and it is always a hit! I don't use the bread cubes, but that is the only thing I do differently. This is so simple, yet comforting...a real winner~YUM! :)

Slow Cooker Risotto

Delicious! Mine was done to perfection in exactly 2 hours. I used a 3qt. slow cooker and that was a perfect size for this. I can't believe that something this simple could come out so flavorful! I will def be making this again! Thanks for sharing. :)

Classic Pecan Pie

I LOVE, LOVE, LOVE this pie! I have been making this ever since I began hosting Thanksgiving, which is about 9 years ago. This really could not be simplier to mix up, and the flavor is wonderful (yes, it's supposed to be sweet)! Pecan pie is also VERY rich, so this goes a long way...This is the only pecan pie recipe that I have ever tried, and it's the only one that I will ever use~YUM! Thanks for sharing. :)

Classic Rice Pilaf

YUM!!!! I halved the recipe (except fot the onion) and baked it in an 8x8 baking dish. This came out PERFECT! I didn't have the saffron, so I omitted that. I can't believe the flavor that came out of just those few ingredients...sooo good! I will def be making this delicious rice again! Thanks for sharing. :)

Flayed Man Cheese Ball

Made this for an appy before dinner tonight and everyone LOVED it! I used our favorite cheese ball recipe: 'Herman Reunion Cheese Ball' fron this site. I used black olives for the eyes too, b/c that's what I had on hand. This was super simple and turned out really cool looking (I wish the lighting was better b/c my pic does not do this justice). Awesome concept, and something that I would've never thought of...This is definitely gonna be a new Halloween staple in my house~YUM! Thanks for sharing. :)

My Version of Mom's Spaghetti Sauce - Recipes at Penzeys Spices

DELICIOUS SAUCE! I halved the recipe (sort of, lol), and used canned tomatoes instead of fresh. I also felt that it lacked a bit of salt, so I added that too, as needed. Very thick, hearty sauce...I would make this again, for sure~YUM! :)

Crescent Pizza Pockets

This made a great, quick lunch for me and the girls today! The only thing I did differently was to fold the crescent rectangle in 1/2 instead of diagonally b/c it wouldn't match up right, lol. I will def make these again...the girls inhaled them! Thanks for sharing. :)

Hot German Potato Salad Casserole

Made this for Recipe Group...We loved it! I did boil the potatoes whole before peeling/cubing b/c I don't like how they get when I do it the other way. I wasn't sure what to saute the onions and celery in, so I used some of the bacon grease and that added great flavor. I also reduced the salt a bit, but that was a personal preference. This came together very easily, and, in fact, I made it earlier in the day and just refrigerated it until I was ready to bake it. This was a nice twist on the usual German potato salad, and one that I will be making again~YUM! Thanks for sharing. :)

1-Dish Pepperoni Cheese Pizza Bake

We loved this! For as simple as it was to make, it turned out really well. I opted to mix my dough in a seperate bowl, and then just poured it into my prepared pan (I used a 9-1/2" springform pan), greased my hands w/ a bit of evoo and spread it right out...couldn't have been easier! Along w/ the pepperoni, I also sprinkled in some cook, crumbled hot sausage, and after topping it w/ the cheese, I added some 'spiders' made out of black olives to keep w/ my Halloween theme. This would be great w/ ANY of your favorite pizza toppings. This recipe is a definite keeper~YUM! Thanks for sharing. :)

Toasted Coconut-Topped Blueberry Cake

YUM...DELICIOUS! I didn't have shortening, so I used softened butter. Also, I used brown sugar and regular coconut in the topping, and a round pan instead of a square. This smelled wonderful while baking and tasted even better...and so simple to make too! A definite keeper! Thanks for sharing. :)

Uber-Braten Kielbasa and Sauerkraut Casserole

Delicious! I used light velveeta in place of the cheddar b/c I have better luck w/ melting it. I also cooked the kielbasa a bit in a pan to get out any liquid and to just cook it through. I rinsed my sauerkraut b/c I don't care for a strong sour taste, so I did need to add a bit of salt to compensate for that. This is serious comfort food, and I will def be making it again~YUM! Thanks for sharing. :)

Panzanella Salad (Bread Salad)

YUM, YUM, YUM!!!!! I measured all of the ingredients for the dressing, using 1/4 cup of basalmic vinegar, instead of just 3 tbsps. (I used white basalmic), but other than that, I just eyeballed all of the other ingredients. I did cube the bread a bit earlier and let it 'dry' on a cookie sheet in a 350 degree oven for a few mins. This was a perfect combo of flavors, IMO. Even hubby, who doesn't like 'soggy bread' ate this up and commented on how good it was. A definite keeper! Thanks for sharing. :)
