Jan's Simple and Tasty Egg Rolls

These egg rolls are so simple to make and SOOOOO DELICIOUS! I have to admit that I have made these a few times (or more) before, and they are a HUGE hit with the family. I've even made and froze these w/ great results. These are a family favorite~YUM! Thanks for sharing. :)

Garlicky Salt and Pepper Fries

Delicious! I used a clove or two more garlic than called for and a bit more salt. These reminded me of potatoes that my mom used to make for us growing up...Sooooo tasty! A definite keeper~YUM! Thanks for sharing. :)

This was tasty! I do agree w/ happyschmoopies that this could use some more spice (like cinnamon) and a bit of salt, but as is, it was fine. I liked that this used applesauce in place of the oil for a healthier alternative. The kids really liked this, so I would most likely make it again, but add a bit more 'spice'. Thanks for sharing. :)

BLT Cups

Made this for Recipe Group...Delicious! I intended to buy wonton wrappers, as per the recipe, but the grocery store was out (shocker, lol), so I ended up using mini fillo cups, which worked great! These really do taste like mini BLT's. I could even see just using this as a dip w/ crackers or toasted bread pieces or just on toasted bread for a sandwich. I will def be making this again~YUM! Thanks for sharing. :)

Easy Cashew Sea Salt Toffee

Simple and delicious! I did use more cashews than called for b/c the amount didn't seem like enough to me once I put it out on the cookie sheet, but that was my only change. LOVED the addition of the sea salt, both inside and on top. Keep a close eye on the butter/sugar mixture as it cooks (I burned mt first batch, lol). Definitely use butter for this, no margarine, b/c you will get a rich, buttery flavor! I can't wait to make this for the holidays...a definite keeper~YUM! Thanks for sharing. :)

Chicken Fajitas from Mazola®

For as simple as these were to make, they were really, REALLY good! I used a combo of green and yellow peppers and WW flour tortillas. Just before serving, I squirted a fresh lime wedge over and topped with some spicy salsa. I would def make this easy, yummy, healthy dish again! Thanks for sharing. :)

Slow Cooker Spaghetti Squash

I just recently tried this method for cooking spaghetti squash after seeing it on Pinterest, and this is the only way that I will do it from now on! I tried it twice and both times the squash came out perfectly...this method is a keeper!

SO GOOD! I got distracted (shocker, lol), so mine came out a bit darker than I would've liked, but they are still yummy! I used pumpkin seeds. The guys are loving them...a definite keeper~YUM! Thanks for sharing. :)

Fantastic!!!! I mixed this all up in my kitchen aid w/ excellent results and less mess! I made this a few days before and refrigerated it until I was ready to use it, just bring it to room temp first. I used this to cover cookies and it really worked well...This recipe a keeper~YUM! Al's Favorite Spinach Power Salad

This was tasty! I really enjoyed the combo of flavors and textures. I wasn't sure about the dressing at first, but once combined with everything else, it was fine. I did add some sea salt and fresh cracked pepper. This was nice and I felt good eating it. I would make this again, and add some thinly sliced red onion too! Thanks for sharing. :)

Swiss Cheese and Bacon Scalloped Potatoes

We all LOVED these potatoes! I used a whole 8 oz. block of Swiss cheese, grated. Also, I followed Baking Nana's advice and salt and peppered each layer of potatoes. This was serious comfort food, and something I will def be making again~YUM! Thanks for sharing. :)

Buzzard's Bay Bourbon Scallops

Aside from my pathetic looking sea scallops (believe it or not these were sold as sea scallops, and I swear they were bigger before I cooked them, lol), this was FANTASTIC! I could've literally drank the sauce...It was sooooo good! I can't wait to try this again w/ 'real' sea scallops...a keeper for sure~YUM, YUM, YUM!!!!!!!!! Thanks for sharing. :)

Chicken Paprika

Made this for Recipe Group...We LOVED this! Chicken Paprika is one of my hubby's favorite meals, so I knew this was gonna be a hit w/ him. I did lighten it up a bit, as we are trying to eat healthier...I used whole wheat flour in place of regular for dredging, sprayed my pan w/ olive oil cooking spray instead of using oil and reduced the amount of sour cream by more than 1/2 and used light sour cream. This still provided the richness/creaminess w/o all the extra fat/calories. I served this over Ronzoni Smart Taste egg noodles (this was our first time trying them and they were FANTASTIC, BTW!). This was super simple to make and a definite keeper~YUM! Thanks for sharing. :)

Whipped Pumpkin Pie

Made this for Recipe Group...Everyone really enjoyed this pie! I am only giving it 4 stars b/c I changed up the spices a bit (after reading the other reviews) by reducing the nutmeg by half and adding about 3/4 tsp. cinnamon. I used a prepared graham cracker crust, which worked great for this and sprinkled a bit more cinnamon on top. We thought the flavor was nice and light. I would make this again! Thanks for sharing. :)

Parmesan Roasted Acorn Squash

Very good! This is my first expierence w/ making/eating acorn squash (crazy, I know!), but I really enjoyed it. Hubby and the kids didn't really care for it, but that just means more for me, lol. I liked the flavors (I even used the thyme, (dried), which really is not my favorite, but I liked it on this), and it was really simple to make. I did peel my squash. I still prefer butternut squash, and I may try this recipe using that next time, but this was a nice change and one I would make again! Thanks for sharing. :)
