Race Day Salsa

Great salsa! I used canned diced tomatoes, and instead of tomato juice, I just used the liquid from the tomatoes, which worked well. Only regular black beans on hand, so I used those. I had to use canned corn, so I dried it very well and sort of 'roasted' it in a pan (I know it's not the same, but it worked). Everyone really enjoyed this...I will def be making it again~YUM! Thanks for sharing. :)

Simple, delicious and a HUGE hit! I did add some garlic powder to the mix for another layer of flavor. Spicy, but addictive...a definite keeper~YUM! Thanks for sharing. :)

Roast Beef Subs with Balsamic Onions and Brie Cheese

Delicious! LOVED the basalmic onions. I'm the only one that likes brie cheese, so I used that on mine and provolone on the guy's. I toasted my buns first and added a bit of mayo before serving. I will def be making these again~YUM! Thanks for sharing. :)

Toasted Pumpkin Seeds Teriyaki Cajun Style

These were very good! I did not add the extra salt, and they were fine that way. The flavors were nice, I just wish the seasoning didn't get so dark, it sorta gave them a bitter taste, but other than that the family really enjoyed them. I would make them again! Thanks for sharing. :)

Red Hot Biscuits

Very good! I used buttermilk instead of regular milk. We really enjoyed the zing of the pepper flakes along with the subtle garlic flavor. These went great with our soup and salad tonight. I would make these again! Thanks for sharing. :)

Better than Zuppa Toscana

Fantastic! I used spinach instead of kale b/c the family prefers it and cubed my potatoes instead of slicing them. Great flavor, and if you cook off the sausage mixture and bacon a head of time, this is a snap to put together. This is a definite keeper~YUM! Thanks for sharing. :)

Kahlua® Sweet Potatoes

Delicious! I accidentally bought a 29oz. can of sweet potatoes, but I used the whole can anyways. These came out soooo good! LOVED the Kahlua flavor, which was not too strong, but just right! I had some heavy cream to use up, so I used that in place of the regular milk, ya know, to keep the calories low, lol. I will def be making this easy, yummy recipe again! Thanks for sharing. :)

Pancetta Tarragon Asparagus

Very good! I cut the recipe down and just sprinkled on the tarragon, to taste. Instead of cooking the pancetta in the oven, I just cooked it in the pan, added the evoo and the other ingredients, and cooked it up, which worked perfectly. This was a great way to 'dress up' asparagus, and I will be making it again! Thanks for sharing. :)

Mom's Out of this World Spaghetti Sauce

Delicious and so simple to make! I was telling my mom what I was making for dinner and she said that growing up my Grandmother always made her sauce this way. This smelled wonderful while cooking and it came out nice, thick and perfectly seasoned...I will def be making this again~YUM! Thanks for sharing. :)

Soft Garlic Knots

These deserve waaaaaaay more than 5 stars...YES, they are THAT GOOD! The dough was super simple to whip up (I used my bread machine). I was able to make these earlier in the day, then I just brushed them w/ the butter mixture right before reheating, just like BN suggests, which worked out great! The dough is so soft and flavorful, and the garlic butter is just the icing on the cake, or the glaze on the knots, lol. I will be using this recipe again and again and again~YUM! Thanks, Penny, for sharing another keeper! :)

Fried Mushrooms with Feta Cheese Sauce

I am only rating this one the breading/frying method of the mushrooms, as this was a last minute decision and I did not have the feta for the sauce...The mushrooms turned out great! I've never made breaded/fried mushrooms at home and was looking for an easy way to do it, this was it! These were perfectly cooked...the breading stayed on nicely and the mushrooms themselves were tender and juicy. It's not even dinner yet, and they are pretty much gone, lol. I will def be using this method from now on, and I can't wait to try the sauce next time too! Thanks for sharing. :)

Roasted Garlic & Chipotle Chile Pepper Hummus

Excellent! I used all garbanzo beans (2 cans, drained and rinsed), and more roasted garlic, lemon juice and salt than called for (personal preference). We LOVED the smokey, spicy kick of the chipotle powder. A great twist to traditional hummus~YUM! Thanks for sharing. :)

Baked Pepperoni Dip

Made this for Recipe Group...We loved this! I cut the recipe in 1/2 (used Hellmann's light mayo), but still used the whole 4oz. can of chilies. Also, instead of just using the pepperoni for the top, I chopped it and mixed some into the cheese mixture and put the rest on top before baking. The pic I took is of the dip before it was baked b/c I knew it would be too dark to get a good pic later, lol. This is very rich, but super tasty and addicting...I served it w/ Frito scoops, crackers and pita chips. This is a keeper~YUM! Thanks for sharing. :)

Popa's Pickled Eggs

Woah, these are DELICIOUS, so simple to make and we LOVE the color of them! I've tried another pickled egg recipe before, and I didn't care for them, so I was definitely skeptical of these...To my surprise and delight, these were yummy! Loved the spicy kick and the flavor that the eggs had. I could totally see using these in a salad (though they are great eaten on their own). I made a jar for my dad too, so I'm curious to see what he thinks of them, and I can't wait for hubby to get home to try these... I know he's gonna love them! Thanks for sharing another GREAT recipe, Brian! :) UPDATE: My dad raved over these and hubby and the little guy absolutely LOVED them! Hubby wants me to make more and an extra batch for him to take to work for the guys...This recipe is a winner, Thanks again!

Perfect Roasted Potatoes with Garlic and Onion

These really were PERFECT roasted potatoes! I did have to use dried herbs b/c that's all I had on hand, but instead of the thyme, which we do not care for, I used Italian seasoning. I made these with Yukon gold potatoes. These smelled wonderful while roasting, and tasted even better...I will be making these again and again~YUM! Thanks for sharing. :)

Turkey Tetrazzini a la Stouffers®

I've never had Stouffer's tetrazzini, but this one was FANTASTIC! The only change (mistake) I made was to use a whole pound of angel hair pasta, as it seemed like too much sauce for just 6oz. of pasta, and that didn't work out so great, lol. The pasta ended up dry, but it was still delicious. I didn't mind it b/c I like my pasta a bit drier, but hubby and the little guy wanted more sauce, so next time I will follow the recipe as is. This was very easy to make and had wonderful flavor...This is a definite keeper~YUM! Thanks for sharing. :)

Wonderful! This came out perfectly... simple to make, smelled heavenly while baking, beautiful and so delicious. I did use all all-purpose flour b/c I didn't have any wheat flour in the house, and it worked great. This is a definite keeper~YUM! Thanks for sharing. :)
