Fudge Truffle Cheesecake

WOW...FANTASTIC! I baked this an hour w/ a water bath, turned off the oven and left it in another hour. This is the first cheesecake I've ever made that did not crack, YAY! This was simple to put together and the taste is wonderful, rich and creamy. I topped mine w/ a simple ganache, once cooled...perfect. This is a definite keeper~YUM! Thanks for sharing. :)

simple steak nachos

HUGE HIT!!!!! I also added some sliced black olives and green onions. Served w/ sour cream and salsa. The platter was wiped out in no time...A definite keeper~YUM! Thanks for sharing. :)

Quinoa with Peas

This was my first experience with quinoa and I was pleasantly surprised with how much we all enjoyed it! I did omit the thyme, as we do not care much for it, but made it as written otherwise. Even my skeptical little guy loved it...a definite keeper~YUM! Thanks for sharing. :)

Zesty Pickled Mushrooms

Very good and so easy to make! Do allow these to set in the fridge for at least the time specified, as they get better that way. I wasn't sure how the flavors were gonna go together, but they were great. I decided to only cut my mushrooms in 1/2 because they were on the smaller side. We ate these as is, but they would make a great addition to a salad or on a anti-pasta platter. I will be making these again! Thanks for sharing. :)

Honey-Lime Vinaigrette

Very, VERY good! I liked that this used lime juice instead of the usual lemon, and all of the flavors complimented each other well. I didn't bother to dirty the blender making this, I just threw everything into a jar w/ a tight fitting lid and shook the heck out of it...worked like a charm! Very nice and refreshing. I will be making this one again~YUM! Thanks for sharing. :)

Jan's Chipotle Roasted Sweet Potatoes

Made this for Recipe Group...DELICIOUS and ADDICTIVE! I did sub olive oil for the butter, only b/c I'm trying to lighten things up here and there, which worked great. I LOVE the flavor of chipotle, but 1 Tbsp. was too much for me (yes, I'm a wimp...the guys loved them as is), though I still couldn't stop eating them, lol. All of the other seasonings were spot on. I served these w/ 2 kinds of dipping sauce, and that was nice, though they really didn't need it. I really cannot wait to get back to the store to get more sweet potatoes...YES, they are that good! Jan, Thanks for another winning recipe that was a huge hit~YUM! :)

Ultimate Frozen Strawberry Margarita

Delicious! I used the whole can of limeade and adjusted the other ingredients accordingly. I blended everything up (minus the ice), and froze it in a container in the freezer. When I needed it, it was perfectly slushy and delicious. A definite keeper~YUM! Thanks for sharing. :)

AWESOME! I reduced the waster to around 1-1/2 to 2 cups and that was perfect for us. Great flavor, and so easy, I may be keeping a batch of these in the freezer at all times~YUM! Thanks for sharing. :)

Cape Cod Cocktail Meatballs

Made this for Recipe Group...LOVED these! So simple to make and so yummy...they were gone in a flash! To save some time, I made/baked the meatballs the day before, then made the sauce the next day and poured it on right before I was ready to bake them the second time...worked perfectly. A definite keeper~YUM! Thanks for sharing. :)

Easy Buffalo Chicken Dip

Loved it! I'm used to making buffalo chicken dip w/ ranch, so this was a nice change. I topped the dip w/ some shredded cheddar and more blue cheese before baking. I did play around w/ the ratios a bit b/c I didn't want to make THAT much. Everyone loved it~YUM! Thanks for sharing. :)

These were really good! Made as written, but suggest you watch them in the oven as mine were staring to burn before an hour. Everyone enjoyed them...I just wish I could have gotten a better pic, lol. I would make these again! Thanks for sharing. :)

Knorr Spinach Dip

This is definitely a staple in our family, too (though I've never made it, myself, my aunt has always been the designated spinach dip maker, lol). I decided to try and make it today, and it was soooo easy to mix up. I did only have 1 box of frozen spinach, so I went with that, but I will def use 2 boxes next time. Great, classic recipe~YUM! Thanks for sharing. :)

Wonton Soup With A Kick

LOVED this soup! I'm lazy, so I just threw the wontons in the broth, and that worked fine for me. I also added a bunch of green onions that I finely sliced. I could see making this w/ rice noodles too. Really great flavor...a definite keeper~YUM! Thanks for sharing. :)

Sopranos Style Tiramisu

I LOVE, LOVE, LOVE this recipe! This is the only way that I make my Tiramisu. Sometimes I use cocoa powder in place of the grated chocolate. What originally attracted me to this recipe many years ago, was that it does not use eggs...This is the BEST! :)

Best Oyster Chowder Ever

Delicious! I used more of all the veggies than called for (except the onion), so I doubled the cooking water to 2 cups and that worked out great. I used canned oysters, and was very happy with how tender and flavorful they were. The recipe didn't specify when to add the liquid from the oysters, so I just added it when I added the veggie cooking liquid and milk. Season with salt and pepper, and all of the flavors come together beautifully. This is a very tasty, simple soup, that I will be making again and again~YUM! Thanks for sharing. :)

Easy Authentic Mexican Rice

This was tasty! I really liked the toasty flavor that cooking the spices and rice added to the finished dish. I do think it was a tad 'greasy', but it wasn't too much so. Mine also took longer than 15 mins. to cook, which was not a big deal. This does need salt, IMO. I just used it, to taste. All in all, it was a basic, simple rice, which was what I was looking for. I would make it again! Thanks for sharing. :)
