Jack 'n' Coke® Burgers

Reviewed: Feb. 23, 2014
Very good! I halved the recipe, and could not find smoked cheddar, so I used regular. Very moist and juicy, and you could really taste all of the added flavors. I would make these again! Thanks for sharing. :)

Covered Crunchy Potato Chips

Reviewed: Feb. 22, 2014
AWESOME! I used a whole bag of kettle cooked sea salt and cracked pepper chips, so I didn't measure any of the other ingredients, but I did use them all, including some shredded mozzarella that I had to use up, and aside from the sour cream b/c I served these w/ Semigourmet's personal recipe for 'buttermilk ranch', which was fantastic w/ these. We literally licked the plate clean, lol. We already can't wait to make these again~YUM! Thanks for sharing. :)

Oven Omelet - Light Version

Reviewed: Feb. 20, 2014
Delicious! I mixed the eggs and milk in the blender to ensure that they were well combined. I used 3 slices of 2% American cheese and 3 slices of muenster that I needed to use up. Very flavorful, and I liked how the cheese made sort of a 'crust' on top. Super simple...a definite keeper~YUM! Thanks for sharing. :)

Ed's Potato Pancakes

Reviewed: Feb. 20, 2014
This is a great, basic potato pancake recipe! I only had Yukon gold potatoes, so I used those. I really wasn't sure of the size of potatoes to use, so I only added 1 egg and mixed it up to see the consistency before adding the second, and I ended up not needing the second, it was perfect with just the one. These cooked up nice and crisp on the outside and soft and tasty in the middle. I will def be making these again~YUM! Thanks for sharing. :)

Creamy Cilantro Pesto Sauce

Reviewed: Feb. 20, 2014
LOVE THIS! I didn't have the artichokes, but I will make sure I have them for next time. I did have a little difficulty blending everything in the blender, but a splash of evoo fixed that issue. I used this to top potato pancakes, and that was wonderful. This has a great, light, fresh flavor that I really, REALLY enjoyed...This is a definite keeper~YUM! Thanks for sharing. :)

Honey-Garlic Slow Cooker Chicken Thighs

Reviewed: Feb. 19, 2014
Delicious! These were cooked perfectly. I used 6 bl/sl thighs, but kept the sauce ingredients the same. After the thighs were cooked, I took them out of the slow cooker and stirred in a little cornstarch slurry to thicken the sauce, which worked out great. Served over Jasmine rice and with a side of 'garlic broccoli' also from this site. The family cleaned their plates, so that makes this a definite keeper~YUM! Thanks for sharing. :)

Dan's Favorite Chicken Sandwich

Reviewed: Feb. 16, 2014
Delicious! I seasoned my chicken breasts w/ salt, pepper and garlic powder and cooked it in a pan. When it was done, I placed it on a cookie sheet and topped it w/ the bbq sauce and cheese and put it in the oven until the cheese was melted. These had a great flavor from the combo of the bbq sauce and ranch. The whole family enjoyed these...a keeper~YUM! Thanks for sharing. :)

Grandma Jackie's Valentine Cake

Reviewed: Feb. 15, 2014
Delicious! I omitted the pecans for the sake of the kids and added some almond extract to the batter. I also used a whole 8 oz. jar of cherries (I've never seen a 4 oz. jar). I made 2 single layer heart cakes ans frosted them with 'Grocery Store Frosting', also from this site. Everyone really loves the flavor of this cake...a definite keeper~YUM! Thanks for sharing. :)

Father Mark's Caesar Dressing

Reviewed: Feb. 10, 2014
Loved this dressing! I did omit the optional salt b/c I didn't think it needed it. Also, I reserved the oil from the anchovies and added a bit to the dressing to thin out, so it would blend smoothly. Great flavor and a definite keeper~YUM! Thanks for sharing. :)

Roasted Chicken with Lemon and Rosemary

Reviewed: Feb. 10, 2014
Delicious! I used all bone-in breasts and 2 chicken legs for the little guy. These came out very moist and tender. I didn't have fresh rosemary, so I used some dried. This also made great pan juices. The only thing I would do differently next time would be to use an extra lemon to squeeze the juice on the chicken before baking to get a better lemon flavor. Made a great dinner tonight...a definite keeper~YUM! Thanks for sharing. :)

Cheesy Black Bean Guacamole

Reviewed: Feb. 6, 2014
Very good! I used green onions in place of the chives and less cayenne than called for (didn't want it TOO spicy). Great texture and loved the 'different' flavor. I really liked the addition of the Romano cheese. A nice take on guacamole...I will be making this again! Thanks for sharing. :)

(Big as a) Cathead Biscuits

Reviewed: Feb. 3, 2014
Very good! I do think that they need a bit more salt, but that's my personal preference. These were very easy to make, and they rose beautifully. This is more of a dense biscuit than a light and fluffy biscuit, which worked well with our dinner tonight. I wish I would've had the lard, but I didn't, so I used butter flavored shortening. I would make these again! Thanks for sharing. :)

Captain Jack's Peach Pie

Reviewed: Feb. 3, 2014
Delicious! I used 2 bags of frozen peaches, un-thawed, so it did take longer to bake, but that was to be expected. Great flavor and just enough sweetness. Served this warm w/ a scoop of vanilla ice cream and a drizzle of caramel sauce~YUM! Thanks for sharing. :)

Reuben Crescent Bake

Reviewed: Feb. 2, 2014
Made this for Recipe Group...This was simple and good! I could not get the dough to roll out to 12", so I just ended up using a smaller baking dish, which worked fine. I think I would've liked a bit more dressing, but I tend to like a lot of dressing on my Reuben sandwiches. This would be nice for a party b/c once you let it sit for a bit after taking it from the oven, it cuts beautifully. I still prefer my Reubens the traditional way, but this was nice for a change. Thanks for sharing. :)
