Asparagus Roll Ups

Made this for Recipe Group...These were good! My asparagus were thin, so they got a bit overcooked, but they were still tasty. I especially liked the bread and cream cheese filling. These were very easy to make and something different...I would probably make these again! Thanks for sharing. :)

Chef John's Homemade Cheese

Delicious! I packed mine firmly into a ramekin, so I came out w/ a pretty firm cheese that had a slight tang to it that we loved. I served it drizzled w/ evoo and cracked black pepper, as suggested by chef John and spread it over lightly toasted baguette. This did not remind me of ricotta, but sort of a mild feta, which really appealed to my ricotta hating, feta loving hubby. So simple and VERY tasty...a definite keeper~YUM! Thanks for sharing. :)

Delicious Spaghetti Bread

I have to admit that I was nervous to try this recipe b/c it really didn't seem like something that I would like, but my little guy asked if we could try it, so I said ok. The kids LOVED it and I thought it was good. Hubby liked it, but said it was 'weird', whatever that means, lol. I did omit the ground beef only b/c it's Friday during lent and we don't eat meat on these days. This was very easy to make and baked up and cut beautifully. I didn't use the whole 8oz. of spaghetti b/c it seemed to be too much for the dough. I would make this again for the kids! Thanks for sharing. :)

Sweet Coconut Rice

We LOVED this! I only used the teaspoon of sugar called for b/c I didn't want it too sweet, and that was perfect, so if you want it SWEET def add more sugar. I liked the addition of the coconut sprinkled on top, which also gave some sweetness to the rice, so keep that in mind as well if you plan on using it. I added some salt, but that was per my own preference. Oh, and I used Jasmine rice, which was wonderful in this. I would def be making this again~YUM! Thanks for sharing. :)

Orzo with Sun-Dried Tomatoes and Kalamata Olives

Delicious! I made this to serve cold for lunch today, and it really hit the spot. I used homemade pesto and black olives in place of the kalamata b/c I didn't have any. Full of flavor! This would go great w/ chicken, which is what I'm planning on making with next time. A definite keeper~YUM! Thanks for sharing. :)

Chicken Club Pasta Salad

Made this for Recipe Group...We LOVED this salad! I used a 12oz. box of tri-color rotini, and omitted the celery. I used all of the other ingredients, but sort of eye-balled them to taste. The whole family gobbled this up...a definite keeper~YUM! Thanks for sharing. :)

Buffalo Chicken Mac and Cheese

Delicious! I halved the recipe and omitted the chicken b/c it was part of our Friday Lenten dinner (no meat), but followed the recipe otherwise. This was so simple to make and had so much flavor that we really didn't even miss the chicken, but I will add it to try next time. My mac and cheese hating son gobbled this up, but I knew he would b/c he LOVES anything 'buffalo'. This is a definite keeper~YUM! Thanks for sharing. :)

Traditional Baba Ghanoush

I love Baba Ghanoush and this one was very good! I used more lemon juice than called for. I had a hard time just mixing this up in a bowl, so I threw it in the food processor and pulsed it until it was the consistency that I wanted, which worked great. Spicy, garlicky and lemony...a perfect balance...I will be making this again! Thanks for sharing. :)

Wilted Spinach Salad and Bacon Vinaigrette

Very good! I halved the dressing portion and that was plenty for us. The only thing I would change next time is to use 1/2 the oil, as it was a bit too oily, so I had to scoop out some of it. The flavor of the dressing is great and went well with the other ingredients. I will be making this one again! Thanks for sharing. :)

Tarek's Irish Stout Fondue

Made this for Recipe Group...I don't know what I did wrong, but this did not work for me. I ended up actually making this twice b/c I thought I did something wrong the first time, but it didn't work out the second time for me either. The cheese would not melt and I was very careful with measuring everything and the heat on the pot. This recipe has rave reviews, so maybe I'm just not meant to make fondue...

Pineapple Cleanser Smoothie

Having never had anything like this before, we liked it! I used fresh pineapple, but I froze it overnight, so it would be on the slushy side, and that worked well. Hubby and I shared this and we both thought it was refreshing and we both felt 'healthier' after drinking it, lol. I don't think that this is something that I could drink every morning, but it will be good maybe once or twice a week for us. Thanks for sharing. :)

Honey Dijon Mustard and Poppy Seed Coleslaw with Cranberries and Toasted Almonds

Just mixed this up for dinner and it's delicious! I did have to change a few things, but nothing major...I used a bagged slaw mix and I omitted the celery b/c I was out of it. Also, I didn't have chives on hand, so I used green onions (about 4 b/c I love an onion-y flavor in my slaw. As for the honey-Dijon mustard, well, I didn't have any of that either, lol, but I did have regular Dijon mustard AND honey on hand, so I made some up and proceeded w/ the recipe. Don't skip toasting the almonds, as they really give this a wonderful nutty flavor. Great mix of flavors and textures. I will def be making this again~YUM! Thanks for sharing. :)

Karen's Rolled Sugar Cookies

These are good! After reading the reviews, I opted to add the whole egg instead of just the yolk, and that worked out fine. I tinted the dough green for my St. Patrick's Day shamrock cut outs. These did not spread, which I liked and just sort of 'puffed' slightly. This is a nice, basic dough with a good buttery flavor. Thanks for sharing. :)

We all LOVED this! I used a bag of microwave kettle corn and kept my almonds whole, but that was my only changes...great mix of flavors and textures. A healthy (and addictive) snack that I will def be making again~YUM! Thanks for sharing. :)

Irish Apple Cake

Made this for Recipe Group...Delicious! I didn't have a 9x9 square baking pan, so I used a 9" round pan and that worked well, except I had some 'dough' left over, but that was fine. This baked up beautifully, and was very tasty...sort of reminded me of a cross between a cobbler and a pie. Topped with a sprinkle of cinnamon before baking, as Pam noted in her review, and served with whipped cream and a drizzle of caramel. This was a big hit for dessert tonight...a keeper, for sure~YUM! Thanks for sharing. :)
