Chicken Club Pasta Salad

Made this for Recipe Group...We LOVED this salad! I used a 12oz. box of tri-color rotini, and omitted the celery. I used all of the other ingredients, but sort of eye-balled them to taste. The whole family gobbled this up...a definite keeper~YUM! Thanks for sharing. :)

Buffalo Chicken Mac and Cheese

Delicious! I halved the recipe and omitted the chicken b/c it was part of our Friday Lenten dinner (no meat), but followed the recipe otherwise. This was so simple to make and had so much flavor that we really didn't even miss the chicken, but I will add it to try next time. My mac and cheese hating son gobbled this up, but I knew he would b/c he LOVES anything 'buffalo'. This is a definite keeper~YUM! Thanks for sharing. :)

Traditional Baba Ghanoush

I love Baba Ghanoush and this one was very good! I used more lemon juice than called for. I had a hard time just mixing this up in a bowl, so I threw it in the food processor and pulsed it until it was the consistency that I wanted, which worked great. Spicy, garlicky and lemony...a perfect balance...I will be making this again! Thanks for sharing. :)

Very nice! I used white corn b/c that's all I had on hand. I thought it was gonna need something else, but it really didn't. Nice and refreshing...I will be making this again! Thanks for sharing. :)

Wilted Spinach Salad and Bacon Vinaigrette

Very good! I halved the dressing portion and that was plenty for us. The only thing I would change next time is to use 1/2 the oil, as it was a bit too oily, so I had to scoop out some of it. The flavor of the dressing is great and went well with the other ingredients. I will be making this one again! Thanks for sharing. :)

Tarek's Irish Stout Fondue

Made this for Recipe Group...I don't know what I did wrong, but this did not work for me. I ended up actually making this twice b/c I thought I did something wrong the first time, but it didn't work out the second time for me either. The cheese would not melt and I was very careful with measuring everything and the heat on the pot. This recipe has rave reviews, so maybe I'm just not meant to make fondue...

Pineapple Cleanser Smoothie

Having never had anything like this before, we liked it! I used fresh pineapple, but I froze it overnight, so it would be on the slushy side, and that worked well. Hubby and I shared this and we both thought it was refreshing and we both felt 'healthier' after drinking it, lol. I don't think that this is something that I could drink every morning, but it will be good maybe once or twice a week for us. Thanks for sharing. :)

Honey Dijon Mustard and Poppy Seed Coleslaw with Cranberries and Toasted Almonds

Just mixed this up for dinner and it's delicious! I did have to change a few things, but nothing major...I used a bagged slaw mix and I omitted the celery b/c I was out of it. Also, I didn't have chives on hand, so I used green onions (about 4 b/c I love an onion-y flavor in my slaw. As for the honey-Dijon mustard, well, I didn't have any of that either, lol, but I did have regular Dijon mustard AND honey on hand, so I made some up and proceeded w/ the recipe. Don't skip toasting the almonds, as they really give this a wonderful nutty flavor. Great mix of flavors and textures. I will def be making this again~YUM! Thanks for sharing. :)

Karen's Rolled Sugar Cookies

These are good! After reading the reviews, I opted to add the whole egg instead of just the yolk, and that worked out fine. I tinted the dough green for my St. Patrick's Day shamrock cut outs. These did not spread, which I liked and just sort of 'puffed' slightly. This is a nice, basic dough with a good buttery flavor. Thanks for sharing. :)

We all LOVED this! I used a bag of microwave kettle corn and kept my almonds whole, but that was my only changes...great mix of flavors and textures. A healthy (and addictive) snack that I will def be making again~YUM! Thanks for sharing. :)

Irish Apple Cake

Made this for Recipe Group...Delicious! I didn't have a 9x9 square baking pan, so I used a 9" round pan and that worked well, except I had some 'dough' left over, but that was fine. This baked up beautifully, and was very tasty...sort of reminded me of a cross between a cobbler and a pie. Topped with a sprinkle of cinnamon before baking, as Pam noted in her review, and served with whipped cream and a drizzle of caramel. This was a big hit for dessert tonight...a keeper, for sure~YUM! Thanks for sharing. :)

Sriracha Cocktail Sauce

We loved this! I did use prepared horseradish and only 2 Tablespoons of sriracha sauce. It didn't seen real hot at first, but after sitting in the fridge, it really kicked up the heat, so I would stick with 2 Tbsps. in thew future. We really enjoyed this on our fish sandwiches tonight and I can't wait to try it w/ fried shrimp...a keeper~YUM! Thanks for sharing. :)

Homemade Veggie Pizza

Made this for Recipe Group...Delicious! I did not use the oregano in the dough, and reduced the amount in the sauce to 1 tsp., per personal preference. The only other thin I think I'd do differently next time is add a bit of sugar to the sauce to reduce the acidity. I made the dough earlier in the day in my bread machine, and par baked my crusts. When it was getting close to dinner, I just had to assemble them, easy peasy! I got 2-12 inch pizzas out of this. The dough crisped up nicely, which we really enjoyed. This is a definite keeper~YUM! Thanks for sharing. :)

Sweet and Spicy Salmon with Grapefruit Salsa

I LOVED the salmon w/ the rub, but I wasn't too keen on the salsa. I did have to use orange instead of grapefruit (which we LOVE), due to conflict with medications, but overall, it just seemed too blah to me. I would've been happier just squirting some lemon over the top of the fish and calling it a day, which is what I will do next time. This was a nice, healthy lunch for me today, and I would make it again! Thanks for sharing. :)

Chicken Cheddar and Guacamole Burgers

Awesome! I bought a 1 pound package of ground chicken, so I just used that instead of 1-1/2 pound, but kept everything else the same. I mixed these up the day before, formed them and put them into the fridge to allow the flavors to blend before cooking them tonight (this also firmed them up a bit). These had a great explosion of flavor that we all loved. I also used homemade guacamole, and hubby had salsa on his b/c he doesn't care for guac. These were a hit at dinner tonight...a definite keeper~YUM! Thanks for sharing. :)

Pork Carnitas with Cilantro Tomatillo Sauce

Loved these! The guy's weren't big on the fresh tomatillo salsa, but I thought it was great with these. I also served them with chopped red onion, shredded cheddar and sour cream. The meat, which took longer for all of the liquid to cook off than was stated (which was fine), was moist, tender and very flavorful w/ a nice, spicy kick. We all agreed that these are a keeper~YUM! Thanks for sharing. :)
